Every summer, many people put aside their work, daily stresses and responsibilities and escape on a vacation somewhere far away from reality. It may be a secluded retreat in the mountains, a camping trip with the kids, an arranged tour in another country, an Alaskan cruise, or days relaxing at an exotic beach or resort.

However, with the current pandemic including social distancing and travel restrictions, along with financial constraints for many, those plans may have to be temporarily shelved. But the desire to escape reality – for just a bit – is very much alive. So, with many people remaining in their homes, how can that off-work journey happen? We have some tips for making the best of the situation and creating cherished vacation memories without ever leaving home. It’s called a staycation.

A staycation is, quite simply, a vacation at home. How realistic, how exciting, or how relaxing you make it is up to you. Theme it up for a more authentic “away-from-home” experience.

What makes a great staycation? Well, that depends on what you consider a vacation. Some people want adventure, while others like relaxing with a drink in their hand. Still others use vacation time to unwind by tackling DIY projects such as renovations. So, what would you enjoy doing if you could craft your own staycation? (Which, by the way, you can.)

Commit To the Best Staycation Ever!

Once you’ve decided to schedule a staycation – whatever it ends up being – commit to it. Mark it on your calendar. Plan for it. Make concrete plans. If you’re working, ask for those days off of work. Don’t just say you’re going to have a vacation and spend the weekend lounging on the sofa, noshing on Cheetos and surfing the internet, unless a week of rest is the staycation you’ve planned.

Whenever you’re going for vacation in your home – especially in these times when so many of us are working from home – try to unplug so your mind’s not on work and responsibilities. Set your work email to the “out of office” setting and write an auto-reply message. Then, don’t check your work emails unless absolutely necessary. Consider NOT telling your boss that you’re vacationing at home. Turn your cell phone off or on silent and set a small window of time each day to check for messages.

Skip the news. The idea is to get away from stress, away from reality. Just concentrate on your vacation experience. The news cycle can wait for a week. Really, it can. This is the time to be good to yourself.

Best Staycation Ever! – Don’t Neglect to Prepare

Prepare for your staycation much like you’d prep for any other vacation. Create your itinerary. Decide what kind of activities you would like to do each day of your vacation. What kind of staycation would you like? Cultural learning, straight-up fun, pampering, relaxing? Write your vacation goals down, and then make a game plan. Don’t want to cook while on vacation? Gather menus from local restaurants that deliver and have them on hand. You could even incorporate different restaurants into the theme of your vacation.

Before your official vacation start time, do all the necessary prep work. Complete all chores in advance. Wash the dishes, dust, pay the bills, scrub the toilets, empty the trash. Do the laundry BEFORE your staycation begins. You don’t really want to be sorting and folding while on vacation, do you?

Best Staycation Ever- Set the Mood for Your Staycation

Many people have saved money in anticipation of an annual vacation to pay for things like hotel rooms, meals, plane tickets and a rental car. Why not channel some of those funds into your at-home vacation paradise?

Create your staycation space – really, truly, set up a space that exudes the theme of your vacation. Move the furniture, change the lighting, order pillows, fairy lights or scented candles – whatever your theme is, run with it. Look at magazines or online trip websites for inspiration. Think about the destination you want. Paradise under the palms? Set up a piña colada or margarita station at home. Roll up the rugs and go barefoot like you’re on the beach. Set up a hammock between backyard trees or on your back porch.

Dreaming of a mountain retreat? Set out pine-scented candles and decorate the room with cottage home decor. Plan for any purchases you’ll need for your staycation. Does your week require some relaxing pillows, aromatherapy candles, a tent or hammock? Dreaming of an overseas vacation? Hit the international foods section of your grocery and stock up on items from that region to set the mood. Planning a spa retreat week? Buy a set of high-thread-count sheets, a couple of luxurious pillows, scented bath salts, essential oils, and a super-soft robe.

To make your staycation ambiance even more realistic, you can make a vacation soundtrack with music that reminds you of that particular place, or perhaps a past favorite vacation that you’d like to recreate. Going to the beach in your mind? Ramp up some Jimmy Buffet music. Missing that trip to Brazil this summer? Make your own compilation of Brazilian favorites including the likes of Roberto Carlos or Anitta. Or queue up some internet music mixes.

Think about your favorite luxury hotel amenities and try to replicate some of those special touches at your own staycation. Love peppermints or chocolates on your pillows? Do it. How about a fruit basket, or a water pitcher of cold spring water infused with the subtle flavor and inviting look of cut fruit? Make it happen. This is all about helping you feel like you’re somewhere else.

Best Staycation Ever- Self-Care Weekend

How about a pampering week, helping you release all the stress that’s built up this year? Consider a self-care “getaway” with a spa day, a YouTube yoga session, or a self-manicure. Start a journal of self-discovery. Draw a warm bubble bath, adding some calming essential oils like lavender or chamomile. Slip into the welcoming suds as you relax your mind and body. Soft music and candles invite you to soak away the stress. Then, wrap yourself up in the soft hug of a luxurious robe. This vacation is all about being good to yourself.

Best Staycation Ever- Retail Therapy Weekend

If you have money saved up that you won’t spend on a vacation this summer and miss shopping, you may want to arrange a retail therapy staycation. Curl up on the sofa with a glass of wine and start online shopping. You could budget what you had already set aside for your anticipated actual vacation, and spend some of that money, or just “window-shop” and dream from the comfort of your favorite recliner.

Best Staycation Ever- Plan Future Vacations

You can’t travel much right now, but the future is wide open. You’ve been staring at your walls for quite a while now, longing to escape. Why not start that escape, at least in your mind? Begin planning your post-pandemic road trip (or plane trip). There’s no time like the present to ponder where you’d like to visit – start with the continent or country, and narrow it down from there. Search online for destinations, hotels and fun activities. Jot them down and start planning for next year.

Look online for interesting destinations and then start searching for places you can stay, like at hotels or bed and breakfast inns. What kind of activities can you participate in while there? Take notes, plan your budget, and work out the details so when it’s time to fly the pandemic coop, you’ll have all your ducks in a row for your next adventure.

The internet is filled with how-to-cook videos. Zero in on one and cook that meal and impress your spouse or family. See if you can find fanciful foods that fit into the theme of your staycation. Or, ask your family to pamper you and cook (including doing the dishes.). You can also sign up for delivered meal preparation kits. These kits arrive at your doorstep with all of the ingredients, already prepped, along with step-by-step directions. You’ll feel like a professional chef in no time.

 

Chill

You may be someone who just needs to chill for a vacation. Vacations don’t always have to be about excitement and activity. Sometimes, you just need peace and quiet to de-stress from life.

Create your zen vacation in a quiet place of your home – make it off limits to the children (perhaps you have someone who can take care of them). Then, unplug your clocks or put them in the closet so you can’t see them. Turn off your phone, put on earphones (if there’s house noise you can’t block out) and just…chill.

If you’re quarantining with your family and yearning for a vacation, build a staycation with a family-friendly theme or activities. Although you have been in each other’s space for months, there are ways you can spend quality, vacation-esque time as a family and build beautiful bonds.

Best Staycation Ever- Camping Out

Go camping for your staycation – for a night, a week, or somewhere in between – you choose. Set up a tent in the backyard, complete with sleeping bags and camp lights. Don’t forget the mosquito repellent or citronella candles. Pack up snacks in bags for a more authentic experience, and string lights in the trees or at the top of the tent for some extra ambiance.

Snag a couple of bags of ice from the store and fill a cooler with food and drinks to keep with the campout theme. Cook your meals on a grill or have a fire pit if regulations allow. Roast marshmallows or craft s’mores. Tell stories around the fire. Stay up too late and laugh too much.

If your idea of camping is closer to glamping, or you don’t have a backyard, then move things indoors. Set up a tent or have your kids create a tent by hanging sheets and other fabrics in clever ways. Unleash your children’s creativity with tent-making – they know how to make the best tents and forts. Set up your indoor camping ambiance with flashlights and flameless candles for light sources. Eat from paper plates and make s’mores in the microwave. Search for a campfire video to play on your TV.

Have a family costume night or a themed party during your staycation. Challenge your kids to dress up as their favorite movie character, singer, or superhero, using clothes, props and supplies already in your home.

Love watching movies? Build a staycation around that. Have a themed movie marathon. Each family member picks a movie that you all watch, or you could categorize movies, like comedies, animation, action or another genre. Don’t forget the popcorn. Plan ahead and surprise your “movie audience” with their favorite movie theater candy and sodas.

Use some of the money you would have spent on lodging, meals, attraction fees and more – and buy a karaoke machine. You may find your family singing until they’re all hoarse and falling down in laughter. Learn a new song on an instrument you play, and hold a “recital” in your living room. If more than one member of your family plays an instrument, work on a performance together.

Virtual Travel and Games

You could also spend the summer vacation money on virtual reality headsets. This marvelous technology is a fantastic way to virtually leave your house and go on vacations together, using 3D travel apps. Want to walk the streets of Paris? Climb mountains in the Himalayas? You’re only a VR headset away.

Backyard Water Game Day for best Staycation ever

Beat the summer heat on your staycation with a day of water games in your backyard. Ask your kids to plan games and gather the necessary accessories like water hoses, kiddie pools, sprinklers, soaking guns, water slides, water balloons (be sure to pick up the broken balloon pieces) and plenty of sunblock. You can go all out renting an inflatable water play set, or you can keep it budget-friendly. Bring on the popsicles and laughter.

Night in for the Parents

Parents may just need a vacation from their kids. Try to set up a cozy, romantic room or patio area for your loved one. Group candles around your backyard. Flameless candles4 are great and there’s no fire hazard. Set up a hammock or pillows or some other way to relax. Chill a bottle of wine, soda or whatever happens to be your favorite beverage. Make up a cheese tray. It can be fancy, or it can be laid-back. Pour a bag of chips into a bowl if that’s your style. Set some mood music, relax and kick back.

Many people love to travel to new locations and learn about culture, architecture, art, languages, food, and more. The opportunity to learn something new during your staycation is limited only by your imagination.

Because of the pandemic, many museums now offer free virtual tours. Spend days in the Louvre, or take an interactive tour of Mark Twain’s house. Visit zoos virtually, or set up Zoom meetings with friends or relatives in different countries so you can practice conversing in a foreign language.

Travel the world for free using your local library card. Libraries have a wealth of e-books available to download from the library’s website onto your own device. Just pick them out and download, prop your feet up and escape into a mystery, thriller, romance, fantasy, or whatever genre you enjoy. Have your favorite beverage and snacks near your reading haven.

Take an online class on cooking, digital art, sewing, or something that intrigues you. This is your staycation. If your goal is to spend more time outdoors, consider starting a new flower or vegetable garden or a compost pile. Set up a rain barrel water collection system, making use of the rainwater rolling off your roof.

You can even make it a learning vacation for your pet. Learn how to teach your pet tricks or a new skill, like sniffing out smells. Or, just chill with your cuddly cat on your lap. For some, that’s a heavenly vacation.

For those who would rather “do” than chill, spend your staycation time learning a new craft. Clear out your schedule and spend that time really digging into whatever it is you want to learn. Use budgeted summer vacation money to order acrylic or oil paints, modeling clay, mosaics or stained glass supplies, whatever strikes your fancy, and learn a new skill you’ll maintain long after your staycation is over.

Renovate a Space in Your Home

For those who need to be active during vacations, think about a renovation vacation. Since you’ve been home so much the last two months, no doubt you’ve zeroed in on a corner or a room of your house that’s begging for an update or a redo. Repaint the kitchen and add a backsplash or replace the flooring. Update your bedroom, adding new curtains or blinds. Turn that depressing basement into a new game room, guest room or home office. Browse among the DIY articles from professionals for inspiration and guidance.

Whatever your stay-at-home vacation fantasy is, try to make it happen. This pandemic won’t last forever, and the vacation you take this summer, at your own home, may just spark some of the best memories ever. Don’t forget to take photos!

One vegetable that is available throughout the year is the onion. Although you’re likely accustomed to using this in recipes as an added natural flavor when you wood-fire the onion, something magical happens to its cell structure that turns these into the buttery, melt-in-your-mouth gems that you’ll want to use in even more recipes.

Onions are high in vitamin C, can aid in weight loss, and have reduced certain cancer risks, especially those associated with the digestive tract.

Whether you elect to do the standard yellow onion, the sweet red onion, or shallots, you will love how smoke vapor works to bring out the best in any variety.

Wood Roasted Onions- Preparing for the Grill

Before preparing the onions for the grill, let’s get the grill started by lighting the burners on only half the grill. This is referred to as two zone cooking. On the lit burner side, I place 2 wood chunks – I’m using the Single Filet size from SmokinLicious® – directly on the heat shields of my hot burners. This will provide the wood flavoring to the onions. My burners are set to medium-low which usually produces a cooking temperature of about 300°F. Simply adjust your burner setting to reach this temperature.

For the onions, I simply cut the tops of, slice in half and remove the skins. I place the halves cut side down in a roasting pan and add about ¼ cup of oil to the pan. With my pan ready, I place it on the unlit side of the grill and close the lid. In about 75 minutes, these will slightly charred, tender, and juicy.

Tasting Notes: Although I used avocado oil since you are not grilling over direct heat, you can use other oils such as olive, almond, walnut, grapeseed, coconut, sesame, canola, etc. Remember, some varieties of onion are considered herbs so doing an assortment of types will give you an abundance of flavors.

Wood Roasted Onions- The Longer the Wood Roast the More Flavor

You’ll find as these onions cook and absorb both the smoke vapor and oil, the scales of the onions will separate and caramelize. The results are tender, juicy and flavorful with a hint of woodsy from the charred edges.

I decided to make a simple sauce of butter, cheese, parsley, and pepper for my onion mix and served these alongside a pork steak, also cooked on the grill with a two-zone method.

The best part is onions are available year-round so I can do this method even in the dead of winter, as remember, the gas grill still functions even in the cold! For those who like to freeze produce, this freezes very well so grill a lot keep them so they’re ready for the winter days you don’t feel like lighting the grill. Just think what an onion soup will taste like when you wood-fire the onions first!

Tasting Notes: If using a charcoal grill, still use a two-zone cooking set up meaning charcoal on only one side of the grill. Be sure you only cook with hot coals, no flames. This type of grilling can have more challenges to steady temperature so make sure you check the onion pan more frequently.

Stay at Home

You’ve committed to a stay at home or in today’s lingo- stay-cation. Lists of games to play, tasks to complete, books to read, and movies and shows to see have been compiled. Now its time to give some thought to the food that will sustain you during this time.

Don’t compromise taste because your afraid to make too much work out of cooking. Using the grill is a super easy way to keep your foods and meals highly flavorful. Let’s give you some ideas that will provide options for everyone to feel satisfied and pleasantly full.

The Breakdown

I think the easiest way to view meal preparation when you focus on the grill as your primary method of cooking is to breakdown foods by categories.

Fruits:

This group of food can make some of the best grilled items. Already sweet in flavor, grilling them produces more vibrant flavor as the heat caramelizes the natural sugars and produces a char to the outside of the fruit. When selecting fruits for the grill, be sure they are ripe but not over-ripened to where they present as soft, or they will have tendency to break apart on the grill. Keep the pieces of fruit large when placing on the grill to maintain as much cell structure as possible. Brush the fruit pieces lightly with a high heat oil like coconut, avocado, or grape seed. The key is to leave the pieces untouched for at least 3 minutes before flipping to get great char and flavor infusion. Perfect fruits for the grill: banana, avocado, apple, mango, peach, papaya, pineapple, peach, pear, plum, grapes, cranberry, eggplant, kiwi, raspberry, blackberry, blueberry, tomato.

Vegetables:

You likely are already aware of popular vegetables to grill like corn on the cob, peppers, and onions, but there are so many more that pair perfectly with the grill. In fact, I would go as far as saying ANY vegetable is appropriate for the grill, you just need to control those that should be exposed to direct heat versus indirect. The easy method of determining heat level is the thicker the skin on the veggie, the more tolerant to direct heat. All vegetables can cook on the grill in less than 10 minutes so time really isn’t a factor. Always remember to avoid moving the vegetables on the grill until they have cooked for at least 3-4 minutes. For preparation to the vegetables, most require just quartering or slicing in half, with some going on whole like tomatoes and smaller mushrooms. Basting with high heat tolerant oils is also recommended.

Nuts and Seeds:

These are foods that react with a super boost in flavor when exposed to the heat of a grill and flavor of wood on the grill. Any seed or nut can be grilled by using a disposable foil pan or griddle pan designed for grilling. These items take about 15-20 minutes and should be stirred every 5-8 minutes to prevent scorching.

The reports are in and all point to one common theory: people are likely to cancel previous plans to vacation away, especially those considering foreign travel, and instead opt for a staycation.

What does this mean for the economy? Of course, there will be negatives with this decision not to travel but one potential positive is the soar in potential grill sales as people begin to ponder ways to keep home cooking interesting.

Options of Including the Grill in Staycation Plans

Likely the first assessment for most considering a staycation is what do we do for food. People often have dining out plans built into their weekly schedule but due to concerns with visiting populated locations like a restaurant, food truck, or even street vendor, these locales will likely be one of the first voluntary bans. That means, cooking at home just moved to the front of the line. Cooking on the stove top or in the oven are certainly options, but given you want to keep your body from getting bored you’ll likely want to branch out to the outdoors and start grilling, especially if the weather makes that enticing.

Here’s where the lesson needs to be learned. Don’t just settle for cooking direct heat method like you do with hamburgers, hot dogs and sausages. Learn how to grill with indirect heat and you’ll be in great position to put a variety of foods including vegetables, animal proteins, and even fruits and nuts on the grill.

The starting point, however, is to assess your current outdoor cooking equipment and decide the following:

► Is the equipment in good working order to be used frequently?

► Are there any components of the grill that need replacing? For example, the grill grates, heat shields, ignitors, wheels on a portable unit, charcoal pan, water pan, etc.

► Is the current equipment of adequate size to feed your family all at once?

► Is the equipment easy to operate meaning it won’t burdened you with constant supervision?

► Does the equipment have an option for a dedicated fuel set up like LP gas conversion to natural gas which will allow you full use without having to worry about filling LP tanks?

► If you want to up the flavor of your grill foods, can you easily add wood to the unit?

If you’re in the market for a new grilling unit, assess the frequency of its use and what you want to be able to cook on it before making the purchase. The more frequent use the higher quality the materials that make up the grill need to be, to keep the grill functional for a very long time.

In the end, you not only will have piece of mind in knowing you can feed your family great tasting foods, but you’ll likely have a great opportunity to bond in a great outdoor environment.

You may be one of the unlucky families faced with the task of social distancing or voluntary/involuntary quarantine. Without question, this will test the limits of each family member’s patience, flexibility, and cooperation.

Not only are you responsible for ensuring everyone’s safety, you’re tasked with keeping them entertained and fed. Right now, with internet and utilities intact, you have the option to stream programs, movies, videos, etc., as well as use electrical and gas appliances. This helps to keep our sanity. We introduced you to smoked potatoes some time ago giving you an easy method of smoking cubed potatoes . Now, we look at sweet potato, a very popular root vegetable that does particularly well on the grill. This time, we’ll smoke the potatoes whole to allow for versatility for recipes.

Get 5 or 6 sweet potatoes selected, preferably of equal size, and let’s get to the grill! Oh, and don’t forget how great it is to grow you own sweet potatoes. Check out this guide to motivate you!

Choose Your Equipment for Smokey Sweet Potatoes

I’m going to use two pieces of equipment today to demonstrate how easily it is to work with what you own to add a smoke component.

For my gas grill, I’ll be using a smoker box equipped with 3-4 wood chunks in double filet size. For the charcoal grill, I’m incorporating both lump charcoal and briquet for the fuel and adding double filet wood chunks for flavor. My charcoal grill is a traditional kettle grill. Both these units are set up for two-zone cooking which means the fuel is on one side – in the case of the gas grill, burners are lit on one side only, for the charcoal grill, charcoal is banked to one side of the grill, using both lit and unlit coals to sustain the heat level. All cooking will be done on the side that does not have any direct heat.

With a target cooking temperature of 325-350°F, these sweet potatoes will cook up and get smoky in no time!

Tasting Notes: Preparation of the sweet potatoes prior to smoking is simple. Wash the potatoes well, pat dry, and then trim off the two ends. Using a knife, pierce the ends one time and the sides several times to provide injection areas for the smoke vapor. This will ensure an even smoke flavor.

SMOKED HERBS FLAVORS WITH SMOKED HERB DUST

Don’t make the mistake of thinking fresh herbs are to be used in dishes as, well, fresh only. Although you may have dried your fresh herb harvest before, we are bringing another alternative to you, smoked herbs.

We hot smoke the fresh herbs on the grill then turn them into a dust for use in all types of dishes. The smoking process will bring a depth of flavor that you’ve likely never experienced before. Go to the herb garden and pick your favorite varieties and let’s get making smoked herb dust!

Smoke Vapor Infusion

One thing about this smoked herb technique is you can do the smoke infusion by a variety of equipment methods.

For those with a gas grill, add wood chunks either directly to the heat shields on one side of the grill or add wood chunks to a metal smoker box that can be placed on the heat shields or the grill grate. For charcoal grill owners, light your charcoal and allow to reduce to hot coals only. Add a piece or two of hardwood chunks or a handful of hardwood chips to the hot coals. If possible, push the hot coals to one side of the grill. For both grill types, you want to use a two-zone cooking method so the herbs don’t catch fire.

For those that don’t own grilling equipment or who simply don’t want to bother lighting up the grill, you can use a handheld food smoker. Simply place micro wood chips in the bowl of the unit, place the herbs in a storage bag with the tubing of the smoker unit, cinch the end of the bag around the tubing, and light the chips. I like to leave the smoke in the bag for maximum smoke vapor infusion.

I used both my gas grill and charcoal grill for the smoke process by placing my herbs in a vegetable basket and grilling with the herbs on the unlit side of the grill. Within the first 5 minutes, you’ll see how the herbs lose moisture and begin the drying stage.

Tasting Notes: I find the handheld food smoker will produce the boldest smoke flavor to the herbs. The intensity of flavor rated from lightest to boldest based on equipment would be a gas grill, electric smoker, pellet smoker, charcoal grill, handheld food smoker.

Once the herbs have charred and dried, it’s time to remove them from the grill and bring them to the food processor. I have a mini processor that only has two settings: chop and grind. I prefer to use this appliance to bring the smoked herbs to dust level but a spice grinder works just as well.

First, remove all the herb leaves from the stems and place a small quantity in the food processor bowl. You can remove the leaves by placing the entire herb sprig in a colander and pressing the leaves through to parchment paper. Secure the lid and grind until you get as fine a dust as the appliance will allow. Both the appliance and the herb will determine how fine the herb dust will get. As you will see, basil dust becomes finer than oregano. This technique will work for just about any herb you can grow or locate at the market. Store the herb dust in glass or metal jars for up to a year.

Tasting Notes: Smoked herbs are much stronger in flavor than the standard dried herb. Adjust the amount used in recipes as needed. It is often best to start with less, taste, and then add more as needed.

Experimentation is key when it comes to #herbdust. Most often, herbs will be applied to meats and poultry, perhaps rice and pasta dishes, but there are so many more foods that are good pairings for herb dust. Let’s take parsley as an example. Commonly used with fish and beef, parsley is a great pairing for sweet items as well. This includes banana and cream. It’s important that you look beyond the traditional side dishes and entrees and explore the sweet side of what herbs can offer. By doing so, you’re sure to find endless combinations that will tickle your palate and give you more pleasing menu experiences.

PRIMARY HEAT SOURCES FOR GRILLING-

We grill outdoors frequently yet I bet not many of you know the science behind grilling. What happens to food when we grill? How does food cook to a safe level on a grill?

Let’s cover the types of heat sources that cook grilled meats and help you decide the ideal method for cooking your favorite animal proteins.

What Is Meat?

Before I get into the types of heat sources to do the actual grilling, let’s talk about what meat really is. Meat is muscle from various animals. It is made up of 75% water, 20% protein, and 5% carbohydrates and fat. Each cell of a muscle is made of two proteins: actin and myosin.

Now breaking down the proteins of meat, these are made of amino acids which react nicely when salt ions are added. Thus, when salt ions are added, the water-retaining capability of meat increases which results in production of a juicy piece of grilled meat.

Now these proteins in meat are coiled when the meat is raw. Add heat, and these proteins uncoil as the protein molecule bonds are broken.

Note – heat shrinks the muscle fibers which will then squeeze out water allowing the molecules to recombine. Brining or marinating meat will reduce this shrinkage of the fibers.

Primary Heat Sources for Grilling

There are three heat sources for cooking foods: conduction, radiation, and convection. Let’s get an understanding of each one.

Conduction primary heat sources for grilling:

The best example of conductive heat is when meats are placed directly on the grill grates over direct heat. The transfer of the heat energy to the grill grate brands the food item with grill marks. Heat is transferred from the source (burner, lit charcoal or wood, electric element, ceramic plate) to the food which then engages the cooking process. The meat cooks from the outside to the inside due to heat transfer. The surface of the meat gets hotter and transfers to the center which is why people who rely on the meat’s outside coloring will under-cook the meat inside.

Convection primary heat sources for grilling:

Convection heat is transferred with a fluid which can include water (think boiling a food item like potato), oil (think French fries), and air (think your oven or two-zone cooking on a grill). Now, convection cooking only occurs on the exterior of the food while conduction heat cooks the interior.

Radiation primary heat sources for grilling:

My favorite example of radiation heat is cooking marshmallows on a stick held near a campfire. Essentially, this is how charcoal/wood grills cook. You elevate the food over the heat source.

What influences grilling is the length of time and the type of heat. Add in difference between temperature and heat as materials also play a part in the transfer of the heat energy. Water transfers slower than metal.

Radiation produces more heat than convection. You can easily increase the radiation heat on a charcoal grill by increasing the number of charcoal pieces. Gas and pellet grills produce convection heat. Convection heat dissipates easily by air currents. Infrared units known as intense infrared (IR) have marketed that they produce a better sear on meats. What is happening is heat energy is delivered faster than convection heat units but slower than conduction units. You also have the risks that the delivery of this energy via IR could be uneven resulting in black/burnt areas while other areas of the meat are light in color.

Primary Heat Sources for Grilling- Types of Heat on Different Equipment

Let’s look at the heat types for specific equipment so you know how the energy used cooks your meat.

Gas Grills:

Burner produces radiant heat that in turn heats the heat shields above the burners producing radiant and convection heat (note gas grills have permanent vents built in the unit). The grill grates then heat and produce conduction heat to the exterior of the meat which converts all this heat energy to conduction to cook the meat thru the interior.

Note gas grills can be set up with direct cooking (all burners on) and indirect cooking (only half the burners lit). If you cook with the lid up on a gas grill, you allow radiant heat to escape which will cool the top of the meat.

Charcoal/Wood Units:

Radiant heat is produced at the bottom of these units with the grilling grates absorbing the heat energy that produces conduction heat. Heat from below the meat is absorbed and converted to conduction heat to cook the interior. The lids on these units will produce convection heat due to the built-in vent that has a control setting.

Like gas units, charcoal/wood units can be set up direct or indirect cooking method with the foods absorbing indirect convection heat from all sides which then converts to conduction heat to cook the meat’s interior.

Flat Tops/Plancha/Griddles:

Whether gas or charcoal fed, the fuel source produces radiant heat while the solid cooking surface produces conduction heat to the meat. Due to direct contact of the meat to the solid cooking surface, the direct contact side of the meat will brown easily while this no lid unit allows radiant heat to escape causing the top of the meat to cool and not brown.

Infrared Units:

Burners on these units produce radiant heat which then heat energize the ceramic, glass or metal plate. Grilling grates absorb the heat and produce conduction heat where the surface of the meat contacts the grate.

Always remember, on any unit regardless of heat source, thickness of the meat and not poundage will determine cooking time as you must remember that conduction cooking progresses to the interior. You must use a digital thermometer to ensure meat is cooked properly before consuming. Never rely on the outer coloring of the meat or recommended time per pound in a recipe. A digital thermometer is the only way to know.
