We have all been in Tom’s position. We love grilling and smoking but prefer the warmer weather. For those of us in 4 season climates with below zero temperatures in winter and lots of snow, it seems too hard to continuing grilling! But just as Bert remarks, you do not have to give up cooking outdoors just because of the weather.
It is one of our top questions. Wood storage. Where to store wood, how to store wood, temperature ideal for storing wood, shelf life of stored wood. If you are an avid follower of our readings, you are likely familiar with our two cartoon characters, Tom and Bert. There is misinformation out there that you may have been victim to. When cooking with hardwood, you may have been under the impression that only certain woods can be used with certain foods. For instance, hickory is reserved only for pork shoulder and brisket. Cherry for chicken, etc.
But that is hardly the truth.
Hardwood used for cooking must be viewed as another ingredient. As a key ingredient, it needs to be balanced with the food item and other ingredients used in preparation before grilling and smoking.
The intent today is to provide a guide on combinations of hardwood that work well for specific foods. Essentially, the ingredients of a rub, glaze, sauce or marinade will dictate what hardwoods will maximize all the flavors to become a finished masterpiece.
Combining Hardwoods- Hardwood Selection as a Compatible Ingredient
The goal when using hardwood is balance of the flavor outcome. You never want the hardwood to produce an ashy or burnt flavor. The essence of the wood should simply add to the beautiful flavor outcome for a memorable eating experience.

When I design wood recipes for specific foods, I like to think about balancing out a medium or bolder flavor with one that is lighter. For lighter fare items like vegetables and fish, two wood combinations are generally used while longer cooked animal proteins can tolerate three hardwoods well.
In the chart that follows, reference is provided to various foods that benefit from exposure to the specified hardwoods. Use the color blocks indicated under each food group to guide you on combinations.Find the same color blocks in that group, and you have the balanced combination of hardwood. For instance, under Fruit, there are two red squares for an alder and cherry combination. Under the Fish column, there are 3 options: Alder and Maple represented by the pink square, Beech and Cherry represented by the orange square, and Ash and Maple represented by the gray square. These combinations are balanced by the essence they produce in the smoke vapor. Just use equal parts of each wood and remember, always start with a small quantity of hardwood as it does not take much to produce great flavor.
TIP: if you are using a spicy rub, default to combinations that includes mild to moderate flavor intensity. Using sweet ingredients, include a bolder hardwood flavor.

As a billion-dollar business, selling grills is likely not going away any time soon. In fact, sales are gaining strength thanks to COVID-19 which forced many to find ways to keep cooking and eating interesting while forced to stay out of restaurants.
When asked, most people say they grill or barbeque for flavor. If that is the case, then why are some of the most common practices the ones causing the most variation in the taste of your grilled foods?
Here are the top 12 grilling mistakes you should avoid.
#1 Skipping Preheat of the Grill
It does not matter if you prefer to use a gas grill or a charcoal unit, you need to preheat the grill before adding food. Why? It is the only way to avoid having your foods stick to the grill grate. When you allow the metal to heat to a very hot level, the protein in meats cannot form a bond with the metal grate. Plan about 5 minutes preheat time for charcoal grills and 15 minutes for gas units.
#2 Cooking on an Unclean Grill
Yeah, I know. The grill is located outside so you think it does not need the same care and cleaning as your kitchen equipment indoors. Wrong! Leftover food particles, grease, smoke tar and creosote can build up on various parts of the grill and cause changes in food flavors as well as make the food stick. Plus, a grease trap that has never been emptied can ignite which will ruin your planned grill day! Get in the habit of scraping the grill grate after preheating and lightly scrub the cooled down grill including the lid area, with steel wool and water. The lid likes to hold on to carbonized grease which becomes flaky and falls off onto your foods if left in place.

KIWIFRUIT GETS SMOKY
Kiwifruit is now in season! It’s time to use this potassium, vitamin A, C & E enriched fruit in your favorite recipes. How about doing something to up the flavor level a bit?
Packed with more vitamin C than an orange and as much potassium as a banana, Kiwifruit, more commonly called kiwi, is also a fiber powerhouse. I’m going to take this creamy fruit favorite to a new flavor level by cold smoking it.
The Ease of Hand Held Food Smoking
To do this technique, you’ll need a handheld food smoker, SmokinLicious® Minuto® Smoking Wood Chips in size 6, 8 or 10, a lighter, a sheet pan, a food bag large enough to go over your sheet pan, and a cable tie. Then gather together the number of kiwifruits you’d like to infuse with smoke vapor, and have a knife and cutting board available.
Kiwifruit Gets Smoky by Letting the Smoke In
Simply cut your kiwifruit in half to allow the smoke vapor to penetrate the fruit flesh. As kiwifruit is covered by a brown, fuzzy skin, you will need some of the fruit’s meat exposed to get real smoke flavor incorporate. Otherwise, leaving them whole won’t bring much of a smokiness to the fruit meat.
What I love the most about cold smoking with a handheld food smoker like The Smoking Gun™ Smoker, is how fast this flavoring can be done to any food, beverage, liquid, spice or herb item. After cutting me kiwifruit in half to allow for maximum penetration of the smoke vapor, I place the cut halves on a sheet pan. I then slip a food bag over the sheet pan.
We’ve all been there! You purposely made a list of all the things you would need for the weekend BBQ. Carefully selected the meat, cleaned the grill or smoker the weekend before, and purchased the wood chips to impart that great flavoring you can only get from hardwood! You marinated the meat 24 hours ahead and woke up on grill day full of excitement.
I’m going, to be frank. When having an opportunity to search through social media photos of various foods cooked by fire and smoke and seeing a reference to the wood, I get uncomfortable. There doesn’t appear to be the same concern for the choice of wood as there is for the rub, cut of meat, quality of meat, choice of equipment, and sauce.
Why is it that the wood used to flavor the foods grilled and smoked is an afterthought?
Rating Scale for Cooking Wood
Recently, I ran across an article in Reader’s Digest that focused on the dangers of wildfire smoke, especially for those living in areas of the United States that are hit repeatedly by these events. What struck me the most was the Environmental Protection Agency’s Air Quality Index: good, moderate, unhealthy for sensitive groups, unhealthy, very unhealthy, and hazardous. This guide is used to recommend evacuations of locations, use of HEPA filtration to allow people to remain in an affected area, and as a method of gaining valuable data post-fire on the effects, smoke has on plant life. There is considerable data available from tree bark which has long been known to absorb pollutants.
This got me thinking about hardwoods used for smoking, grilling, and overall cooking of foods. There is no regulatory agency that oversees wood used for cooking. Despite efforts to get the Food Safety and Inspection Services division to recognize the risks associated with cooking with wood, no governmental agency has stepped up to offer regulations in this area such as established inspections of equipment and wood.
Why Kosher is important for Cooking wood!
As the manufacturer of all the products sold under the brand SmokinLicious®, we struggled with what steps to take that would demonstrate our commitment to only offer hardwoods that are considered safe for cooking. Although we stressed that we are bark-free (an important step to reduce the exposure to toxins locked in the bark layers), that we only manufacture from the heartwood (an area of the tree that is known to be resistant to insects and decay), and that we manufacture each cut to the wood for the end cooking product, we simply desired some validation of these steps.
Since we’ve always considered the wood another ingredient to cooking, we decided to explore the options from the food perspective. What certification could we apply for that would demonstrate that we are a food-related item? Kosher certification was the perfect place to start!

People are drawn to kosher food for various reasons including quality, a healthy lifestyle, food safety, and allergy security. By securing this certification, we can demonstrate to the public that our products satisfy the food quality and safety requirements they should strive for daily. As such, our customers don’t have to settle for an unregulated product that frankly, could contain pretty much anything in the package because, as pointed out, there is no system of check on wood cooking and smoking products.

Taking a page from the Environmental Protection Agency, I thought it would be helpful to develop an index to use for hardwood intended for cooking. Our grading system is based on toxicity factors of a wood, ease of lighting, sustained burn, coal formation, smoke production, and heat level. Our index is: Excellent, Good, Fair, Poor, Unhealthy.

SMOKED HERBS FLAVORS WITH SMOKED HERB DUST
Don’t make the mistake of thinking fresh herbs are to be used in dishes as, well, fresh only. Although you may have dried your fresh herb harvest before, we are bringing another alternative to you, smoked herbs.
We hot smoke the fresh herbs on the grill then turn them into a dust for use in all types of dishes. The smoking process will bring a depth of flavor that you’ve likely never experienced before. Go to the herb garden and pick your favorite varieties and let’s get making smoked herb dust!
Smoke Vapor Infusion
One thing about this smoked herb technique is you can do the smoke infusion by a variety of equipment methods.
For those with a gas grill, add wood chunks either directly to the heat shields on one side of the grill or add wood chunks to a metal smoker box that can be placed on the heat shields or the grill grate. For charcoal grill owners, light your charcoal and allow to reduce to hot coals only. Add a piece or two of hardwood chunks or a handful of hardwood chips to the hot coals. If possible, push the hot coals to one side of the grill. For both grill types, you want to use a two-zone cooking method so the herbs don’t catch fire.
For those that don’t own grilling equipment or who simply don’t want to bother lighting up the grill, you can use a handheld food smoker. Simply place micro wood chips in the bowl of the unit, place the herbs in a storage bag with the tubing of the smoker unit, cinch the end of the bag around the tubing, and light the chips. I like to leave the smoke in the bag for maximum smoke vapor infusion.
I used both my gas grill and charcoal grill for the smoke process by placing my herbs in a vegetable basket and grilling with the herbs on the unlit side of the grill. Within the first 5 minutes, you’ll see how the herbs lose moisture and begin the drying stage.
Tasting Notes: I find the handheld food smoker will produce the boldest smoke flavor to the herbs. The intensity of flavor rated from lightest to boldest based on equipment would be a gas grill, electric smoker, pellet smoker, charcoal grill, handheld food smoker.
Grinding Process
Once the herbs have charred and dried, it’s time to remove them from the grill and bring them to the food processor. I have a mini processor that only has two settings: chop and grind. I prefer to use this appliance to bring the smoked herbs to dust level but a spice grinder works just as well.
First, remove all the herb leaves from the stems and place a small quantity in the food processor bowl. You can remove the leaves by placing the entire herb sprig in a colander and pressing the leaves through to parchment paper. Secure the lid and grind until you get as fine a dust as the appliance will allow. Both the appliance and the herb will determine how fine the herb dust will get. As you will see, basil dust becomes finer than oregano. This technique will work for just about any herb you can grow or locate at the market. Store the herb dust in glass or metal jars for up to a year.
Tasting Notes:Smoked herbs are much stronger in flavor than the standard dried herb. Adjust the amount used in recipes as needed. It is often best to start with less, taste, and then add more as needed.
So Many Uses
Experimentation is key when it comes to #herbdust. Most often, herbs will be applied to meats and poultry, perhaps rice and pasta dishes, but there are so many more foods that are good pairings for herb dust. Let’s take parsley as an example. Commonly used with fish and beef, parsley is a great pairing for sweet items as well. This includes banana and cream. It’s important that you look beyond the traditional side dishes and entrees and explore the sweet side of what herbs can offer. By doing so, you’re sure to find endless combinations that will tickle your palate and give you more pleasing menu experiences.
The Culinary Crew wants you to know …
… that the two-zone method is certainly a practice that you will want to master and prioritize in your wood cooking toolkit, especially when grilling and smoking delicate fresh consumables like herbs. Not only will two-zone cooking avoid those acrid tastes associated with flare ups, it will infuse your food items with a nice balance of wood smoke flavoring.
WOOD SMOKERS & GRILLING- RETURN TO THE BASICS! – I recently received an email from a new customer who was questioning the moisture level of the wood she recently purchased. Her claim was, she thought the moisture wasn’t ideal as she was finding that the wood chunks “weren’t catching fire.” That got me thinking that despite what we publish for information on the various methods of wood-fired cooking, when it comes to smoking, the very basics of this method may not be understood, as well as the basics of grilling with wood.
My goal with this article is to remind you of what is needed to be successful with each type of wood-fired method.
One of the knowledge areas I feel is weak is understanding what is needed from the wood for different styles of wood-fired cooking. Let me get you educated.
Smoking
Hopefully you know that hot smoking means you are cooking with wood material to affect the color, aroma, texture, and flavor of the food. This method requires a lower temperature, a longer cook time, fuel for temperature and wood for flavor. Certainly, you can use wood for both flavor and fuel but a more cost-effective method is to use charcoal or briquets for fuel and wood just for the flavor, aroma, color, and texture to food.
For cold smoking, you still need the same items listed above but the temperature needs to be under 80°F which means the fuel is often wood which will flavor, color, provide texture, as well as the minimal heat level.
What’s the difference for these methods? Moisture of the wood product.
Hot smoking needs hardwood that is at least 20% moisture and preferably under 30%. Cold smoking needs hardwood that is under 15% moisture.
Wood-Fired Grilling
This method of grilling generally requires the use of wood both for higher temperature and for flavor. Here’s a big difference with this method: you can vary the type of food used on the grill but how you position the food to the active fire versus the hot coals is another need. Often operators of a wood-fired grill will have a couple of stations to the fire. One will be direct fire or flame cooking. This is for mostly animal proteins that you want to get a great char on the outside while cooking relatively quickly. Then there is wood grilling with the hot coals from the fire. By raking hot coals to one side, you can direct fire items that need less char to them like fish, vegetables, fruits, etc.
Another option with wood-fired grills is you can do both direct heat cooking and indirect. These two methods can also be done directly on cooking grates or by using grilling accessories like high heat tolerant cookware, grill baskets, and grilling pans.
Animal Protein Preparation
Everyone has their own preference when it comes to preparing meat or poultry for the grill or smoker. But did you know that marinating meat or poultry should be done for shorter periods of time not over night or longer. Why? Marinades contain oil and meat contains water so… just like the old saying “oil and water don’t mix”. Don’t take a risk of breaking the fibers down too far and stick to short marinating times. Don’t forget – any marinade left in the bag or pan after removing the meat or poultry should be discarded as it CANNOT be reused due to bacteria growth potential from exposure to raw product.
Now if you’re thinking about a dry rub, feel free to marinate just as long as you want. In fact, I’ve been known to marinate up to 3 days!
A wet rub, however, goes by the rule of a marinade. If you’ve included oil in that rub, short marinating time is best.
Wood Smokers- Wood Quantity Doesn’t Make It Better
If you’ve made the commitment to introduce wood flavor to the grill or smoker, then know up front, it doesn’t take a lot of wood to add flavor. As mentioned at the start of the article, you need to be sure you select the right wood chips, chunks or charwood with the right moisture level for the right application.
When smoking, about 6 ounces of hardwood is ideal to start. Although you may need to add wood during the cooking process dependent on what your cooking (larger cuts of meat may require you to feed additional wood every hour), always start with a reserved amount.
When grilling, the same quantity of wood applies – about 6 ounces. Wood is the ingredient that works with the other flavors to bring out a balanced wood-fired flavoring of the food. Put too much wood on and you’ll have food that tastes like an ashtray. Put wood on that contains too much moisture and it will produce an acrid smoke that will leave bitter flavors and black coloring to the skin or bark.
Let’s summarize. Decide what method of wood-fire cooking you plan to do, if you plan to set up a direct cooking method or indirect, and the hardwood you plan to use. If smoking, plan on that hardwood to smolder given a moisture level of at least 20%. If wood grilling, plan on that hardwood to be drier, between 15-20% to allow it to release flavonoids quickly. Start with about 6 ounces of wood regardless of the method you select and add only as the previous wood has combusted. That’s the basics to having a fun, positive experience no matter what you elect to put on the grill or smoker.

Our asparagus after seasoning and ready to become Charcoal grilled Asparagus!

Nothing in the vegetable word represents late spring-early summer than fresh local asparagus but the window for fresh local asparagus is a short one. The growing season in our area (Western New York State) typically begins mid to late May and lasts until mid to late June all depending on the weather. Buying your asparagus at a Farmers Market or a Farm Stand provides the highest quality asparagus.
Luckily asparagus season corresponds to the beginning of outdoor grilling season and that is a good thing. If you have never prepared asparagus on the grill read this and you may never want to boil or steam asparagus again.
Fortunately for me, my good friends Terry and Donna Grant, owners of SmokinLicious® in Olean, New York provided me with their locally manufactured charwood product for grilling. This is a simple recipe and takes just minutes to prepare.
Charcoal Grilled Asparagus- Ingredients:(serves 2 to 4 persons as a side dish)
1 pound local farmer’s market asparagus
high-quality extra virgin olive oil (EVOO)
salt & pepper
Procedure for Charcoal Grilled Asparagus:
Wash and break off the tough bottom two inches of each asparagus spear
Toss with EVOO and lightly sprinkle with salt and pepper to taste
Place asparagus on a hot grill top
Cook 3-10 minutes; depending on the size of the stems and until lightly charred on the outside but the stems remain firm and crisp (al dente). Tasting a spear or two while cooking will let you know when they are ready to eat
Remove from grill, add salt and pepper to taste and you are ready to go
Optional plating technique: top with fresh Parmesan Reggiano cheese and drizzle with a high-quality balsamic glaze
The above recipe is suitable for anyone including vegans. If you are a meat eater, always grill your asparagus after you finish grilling your meat. While the beef, pork, lamb or chicken rests you can complete this process. Place asparagus spears on the grill where the meat was located, and the small amount of fat left on the grill top adds to the flavor of the natural wood. (This recipe can also be used on a gas grill with wood chunks placed on the heat shields).
With over 60 species of oak hardwood in the USA, this hardwood can be split into two categories: Red Oak and White Oak. It is one of the most popular hardwoods to use in cooking likely because of its ready availability. But as we’ve mentioned before, just because something is available in your area, doesn’t make it a success for all cooking techniques and foods.
Oak is a heavy, strong, and ring-porous hardwood resulting in a coarse texture and prominent grain. Oak hardwood is part of the Fagaceae family of wood. The scientific names for the varieties we manufacture are Quercus coccinea Muenchh., Quercus falcata Michx. Var. Falcata, Quercus muehlenbergii Engelm., Quercus prinus L., and Quercus velutina Lam. The common names for the varieties found in the Western New York and Northwestern Pennsylvania regions include Red Oak, Spanish Oak, Yellow Chestnut Oak, Rock Oak, Smoothbark Oak.
Oak is considered the strongest in flavor for hardwoods. It is known for providing deep coloring to the outer skin of foods meaning a very dark often black outer skin and it can be overpowering to those who aren’t used to smoked foods. It also is a hardwood that can mold easily especially when exposed to significant variations in temperature and humidity. Additionally, it does not like to make contact with metal which can be a challenge when cutting with metal/steel tools! Oak will show its distaste by producing black streaks on the wood or even coating its entire outside with a black “dye”-like substance.
So, if you are keen on bold flavors and definitely like smokiness to your foods, then oak is a clear winner. However, I do recommend using less of this wood when cooking poultry, fish, fruits, vegetables and herbs/spices especially if you have a gas assist unit or are using lump hardwood charcoal or hardwood Charwood for fuel.

The History of Fire Cooking Part III- It May Not Have All Been Good
Although we’ve discussed the benefits of the discovery of fire for cooking, including the higher caloric content needed for survivability, there are other effects to fire cooking that aren’t so positive. This is a relatively new focus in research concerning fire cooking and human evolution.
A USA study suggests that a genetic mutation may be present in modern humans that allows certain toxins, including those found in smoke, to be metabolized at a safe rate. This genetic mutation was not found in other primates like the Neanderthals or hominins. Breathing toxins found in smoke can increase the risk of respiratory infections, suppress one’s immune system, and even cause disruption in the reproductive system. It is possible that by having this genetic mutation, the tolerance to smoke toxins was a needed adaption that gave early humans the ability to survive in this very toxic environment.
Closeness Brings Disease
We also know that fire allowed for not only cooking but warmth, light, and protection. To gain the positives of fire, early humans would gather together in close proximity to one another. A 2016 study suggests that with the advancement of fire’s uses, people remained in huddled groups for long periods of time, suffered persistent coughing resulting from the smoke toxins, and subsequently damaged the lungs. This may be what spurred the spread of tuberculosis which some scientists believe emerged 70,000 years ago. In fact, most scientists believe that fire was regularly used around 400,000 years ago, thus supporting the advent of tuberculosis.
Other scientists believe the use of controlled fire introduced additional airborne diseases. Plus, many opine that the early days of exposure to inhaling smoke from open fires stimulated our discovery of smoking tobacco. Without question, these believers feel that climate changes resulted from the ongoing burning of carbon. For them, biological and environmental changes co-mingle.
Gender Identities
It is amazing that in those early years of fire discovery the establishment of gender roles occurred and seems to have held in general theory. As tools developed and cooking with fire expanded, men did the hunting and women stayed with the fire, maintaining it and cooking previously hunted and foraged foods on/over it.
Although today both males and females hunt, the number of men still outweighs the woman. Despite the number of male chefs outnumbering the women, women still dominate as the primary cook in the home. Yet, males still barbecue and grill in a greater number.
It seems clear that there are other influences on the roles men and women play when it comes to fire cooking around the world.
