Here’s the perfect way to keep great flavors on hand for when you need them. I’m going to show you how to make smoked herb flavor cubes which consist of our previously smoked fresh herbs and, in my case, bone broth. Whether you smoke all the components of these flavorful cubes or not is up to you. I happen to like the combination of smoked bone broth and smoked herbs for some of my soups, sauces, and glazes. These are the perfect little flavor gems for all your recipes and the prefrozen cubes make adding so simple.

Here is all you need to make these flavorful cubes . Silicone ice cube trays, your choice of herbs and spices, as well as broth or stock. It will take about one quart of broth to make 40 flavor cubes.

To make portioning the cubes a snap, I use a measuring cup for the liquid. As I previously smoked my herbs and placed them in spice jars, I can portion out the herbs directly from the jars. Today, I’m using smoked parsley and oregano dust for infused broth cubes. These are two of my more popular blends for sauces, soups, and extra flavor to vegetables. Be sure your broth or stock is well strained before adding to the cube trays.

Tasting Notes: Don’t forget about fruits as well. These make perfect flavor cubes and can be cold smoked using a handheld food smoker .

Herbs Smoked & Iced- 1-2-3 And Done!

The best part of making flavor cubes is the freezer does most of the work. I simply place previously smoked herbs of my choice into the bottom of the silicone tray compartments and pour in the broth. I like to put my cube trays on mini sheet pans for easy placement and removal from the freezer. Just be sure to label the trays so when you go to un-mold, everything will be easy to identify. That’s it! How easy is that??

Tasting Notes: You do not have to use silicone cube trays but I prefer these to metal or plastic. I find they don’t taint the flavor of the cubes and they are extremely easy to release.

After adding smoked herbs to silicone ice trays and pouring in smoked bone broth, these flavor cubes just take hours of freezer time to set and then they are ready for use. I like to un-mold mine and place in storage bags that allow me to reach in, grab what I need, and reseal the rest. The depth of flavor these little cubes add to soup and sauces, whether for meats and poultry or vegetables, is fabulous.

Don’t forget to experiment with a variety of tastes and don’t feel you are restricted to just one herb or spice per cube. Make flavor blends like Indian flavor cubes with curry, ginger, allspice, and cumin. Or an Italian blend with oregano, basil, marjoram, thyme and rosemary. Or, combine fruit and spices for cocktail-like blends. There are no rules to the combinations you can use so find the flavors you love and flavor cube away!

KIWIFRUIT GETS SMOKY

Kiwifruit is now in season! It’s time to use this potassium, vitamin A, C & E enriched fruit in your favorite recipes. How about doing something to up the flavor level a bit?

Packed with more vitamin C than an orange and as much potassium as a banana, Kiwifruit, more commonly called kiwi, is also a fiber powerhouse. I’m going to take this creamy fruit favorite to a new flavor level by cold smoking it.

The Ease of Hand Held Food Smoking

To do this technique, you’ll need a handheld food smoker, SmokinLicious® Minuto® Smoking Wood Chips in size 6, 8 or 10, a lighter, a sheet pan, a food bag large enough to go over your sheet pan, and a cable tie. Then gather together the number of kiwifruits you’d like to infuse with smoke vapor, and have a knife and cutting board available.

Kiwifruit Gets Smoky by Letting the Smoke In

Simply cut your kiwifruit in half to allow the smoke vapor to penetrate the fruit flesh. As kiwifruit is covered by a brown, fuzzy skin, you will need some of the fruit’s meat exposed to get real smoke flavor incorporate. Otherwise, leaving them whole won’t bring much of a smokiness to the fruit meat.

What I love the most about cold smoking with a handheld food smoker like The Smoking Gun™ Smoker, is how fast this flavoring can be done to any food, beverage, liquid, spice or herb item. After cutting me kiwifruit in half to allow for maximum penetration of the smoke vapor, I place the cut halves on a sheet pan. I then slip a food bag over the sheet pan.

THE BOLDNESS OF OAK HARDWOOD SPECIES!

New York State is home to the most varieties of Oak anywhere in the world! Currently, there are 16 native to New York State alone, with many more varieties having been brought into the state. In Central Park alone, there are 18 species of oak represented. Comprised of two subgroups – white oaks and black oaks – there is one key distinction between these groups. White oaks produce acorns that are usually sweet while black oaks produce bitter acorns. So how does this translate when using Oak wood for smoking?

At SmokinLicious®, we try very hard not to make flavor descriptors of each hardwood we manufacture into cooking wood, as we hold to the belief that there are so many factors that contribute to the reveal of the underlying wood flavonoids (i.e. temperature the wood is exposed to, other ingredients used on the food cooked over oak, moisture level of the wood, etc.). However, we do have a scale to guide the user on the boldness of flavor. Oak is at the highest end of that scale. It is the boldest flavor we offer!

Knowing that oak is a powerful flavor, I must remind you that smoke particles do not penetrate completely into the meat. In general, for meats, smoke vapor only penetrates about a 1/8” meaning the “flavor” you will decipher from the oak is actually to the outside area of the meat. Certainly, if you cook a meat until it can be shredded, you will mix the outside flavor areas with the less wood flavored inner meat and get a good balance to the smoky flavor.

Hardwood- The Boldness of Oak Hardwood Species

As I’ve tried to stress, cooking foods with a specific hardwood is the choice of the cook. I am not one to say that you can never cook a specific food with a certain hardwood. Everyone’s palate is different and tolerates different levels of sweet, sour, bitter, and salty. I will, however, remind you that bold flavors need to be balanced and this can easily be done through the other ingredients incorporated with that food item or even on that food. This will allow you to use oak wood for smoking: cold smoking say beef jerky or game jerky, hot smoking lamb, goat or beef, grilling steaks of beef or pork, stove top smoking pungent flavors like onion and garlic, and handheld cold smoking say a robust cheese.

As always, very little quantity of wood is needed to bring forward the unique qualities of the wood and Oak, with its boldness, is not an exception. If you’re in the market for a very bold flavor, then go for the black oak varieties including Pin Oak, Scarlet Oak, and Red Oak. A step down from the black oaks, the white oaks include Chestnut Oak, White Oak, Swamp Oak, and Post Oak. Either choice will bring you hardwood offering that is strong in appearance, aroma, and flavor!

ON THE LIGHTER SIDE- EASTERN ALDER!

As we highlight another hardwood from our offerings, we need to start by pointing out that we are referring to Eastern Alder not the better known Western Alder or Red Alder of the west coast. Eastern Alder is part of the Birch family, with the scientific name of Alnus but the common names for the varieties found in the Western New York and Northwestern Pennsylvania regions of Eastern Alder (Smooth Alder), White Alder, Red Alder.

Alder is a relatively soft hardwood of medium density. It is most commonly used with fish but I think I need to stress here that really any cooking hardwood can be used with any food item at the discretion of the cook. Many factors play in to how a hardwood reveals itself during the cooking event: rub ingredients, brine ingredients, quality of the meat/poultry/fish, freshness of the food item, style of cooking (over the coals, in the coals, indirect heat, etc.) and most importantly, oxygen flow which feeds the combustion of the wood. Alder provides a neutral coloring to the outer skin of foods which is why it is a favorite for fish. Would this be a first choice for say a steak or other beef item? No, but I certainly like to use it for lots of other things like fruit, vegetables, cheese dishes, and of course, fish.

For cooking, you can expect Alder to perform as follows:

Heat Level: Medium – 17.6MBTU

Fuel Efficiency: Fair

Ease of Lighting: Good

Ideal Uses: Cold Smoking/Poaching/Grilling/Stove Top Smoking

When you’re looking for something on the lighter menu of woods, keep Alder in mind, and explore its lighter heat level and versatility for the more delicate items of cooking.

Recently, I received a very interesting question regarding the safety of ingesting foods and beverages that have been exposed to smoke vapor using hand-held food smokers. Specifically, the question consisted of whether you need to be 18 years of age for items that have been infused with smoke using these gadgets.

This got me thinking:

  • does the word “smoke” automatically give off the bad vibe response?
  • why do people only inquire about the smoke without needing to know more about the plant source that produces that smoke?

There is a lot of data out there on carcinogenic effect to high heat grilled foods like burgers, chicken, and steaks, even data on hot smoking foods at lower temperatures. Really, what it all boils down to is, if you grill meats to the point where you blacken them, that increases the risk for the carcinogens. Even if you cook to the blacken state, eating these foods in moderation will halt any real risk over an average person’s lifetime.

So why the question on legality to consume smoked foods and beverages?

If you understand that the tobacco industry had to start putting warning labels on tobacco packaging back in 1966, and smokeless tobacco products in 2010, then you comprehend that smoke vapor does contain toxins. Everything regarding the level of toxicity with cooking is related to the type of food, method of cooking, cooking temperature, and length of cooking time.

Let’s examine those parameters from the handheld food smoking perspective.

You are not cooking the food by this method, merely infusing it with the smoke flavonoids, so there is no temperature (cold smoking technique). You are not exposing the food to smoke vapor for hours – it really comes down to minutes. Most importantly, you are not directly attempting to inhale the smoke vapor into your lungs. Yes, if your standing near the container that is holding the cold smoke when you open it, you will have some exposure but not like the person that takes a drag directly from a tobacco product or is chewing on a tobacco product!

Like anything else in our world, there are risks to everything we do, experience, sense, taste, explore, desire. Hot smoking is another name for roasting just at a lower temperature and usually with cheaper cuts of meat.

What should never be compromised is the plant material – the wood – that is used to extract these flavors.
