when you smoke flavored food too much and how to correct!
I’m going to start this by stating smoke is a lot like salt. You can add more of it but if you add too much to smoke flavored food, it’s hard to correct. All is not lost though. I’m going to provide a tip that could save a smoke flavored food item that has been over smoked.
It’s All in the Ingredients
You’ve made the mistake of either using too much wood material to smoke or you smoked for too long. Either way, the outcome appears to be a disaster. Take a breath and a step back and assess the ingredients you used.
Often, you can correct the smoke level by adding an ingredient that was not included in the recipe. For instance, if your smoke flavored food involved a vegetable for a soup, find an ingredient in the soup recipe that has not been used. This may be cream, sugar or vinegar. Additionally, by adding the ingredient that was smoked in a non-smoked fashion, you can reduce the smoke flavor intensity. If you infused too much smoke in the broccoli for your broccoli cream soup, think about steaming some additional raw broccoli and adding with the smoked base. That will diffuse the smokiness.
SMOKE IS A GAS- Prime Factor for Smoke Flavored Food Items
Smoke is a vapor or gas. That means it is readily absorbed by the food product especially if moisture is present. This is one of the reasons why a water pan is used in a smoker.
Certain foods are more apt to be over smoked. Items like vegetables, fruits, dough item like breads, pies and tarts, and dairy items like egg-based recipes. Wood choice, amount of wood and length of the smoking process all play a part in how much essence comes from the wood.
Remember, smoke flavored food like a cut of meat can taste bitter with too much smoke vapor. This results from using wood that is too wet or using a wood that is not ideal for food.
But even a bitter smoked meat item can be saved by blending the meat with a sauce or glaze, especially one that contains a balance of sweet and heat.
In the end, you may find a smoke flavored food destined for the trash becomes a star dish when you know how to balance the smokiness with another flavor.

Foods to Bulk Grill
#1 Peppers
Do not purchase fire roasted peppers in the store! They are so easy to make using any type of grill you own and any pepper you prefer. By grilling in bulk, these can be added to meals like grilled sausage topped with peppers and onions, whipped into a fire roasted pepper tapenade for snacks or appetizers, bring an elevation to a salad, or as an addition to Dutch oven meals (think chili, goulash, mac and cheese).
Over the past several months, you have learned how your own hands can play host to transmitting the virus known as COVID-19. Once transmitted, the virus can potentially live on surfaces for up to several days.
Of course, there are factors that determine how attracted the virus is to the surface. Porous surfaces like those of cardboard and wood are not very attractive to the virus. It prefers smooth surfaces.

Tom asks a great question, as often, we do not think about the wood we cook with. How is it bulk stored, what has it been exposed to, how much dust is in the product? Remember, dust slows combustion and can cause equipment failures. This is the main reason why SmokinLicious® designed a process for screening our wood chips to eliminate as much dust as possible. That is just step #2 in the process after producing the chips from larger pieces of wood.
This article was born from a question which was recently forwarded to SmokinLicious® to answer. “Why salt choices are necessary in food despite adding different ingredients even for sweet dish need(ing) salt”.
I realized just how important salt is to the style of cooking known as barbecue.
Salt Choices- Why the Need to Salt?
Salt is a mineral found in crystalline form that is used as a seasoning for food. Simply put, salt brings out the flavor or natural essence of food. Salt choices draw out the natural juices in raw meat and dissolves with the liquid forming a brine that gets reabsorbed by the meat. This results in the meat’s ability to hold on to more of its own natural juices during cooking.
Salt Choices- Types
Over the past 5 years, salt choices have become a very hot commodity in the food industry. There are hundreds of kinds of salts but for simplicity sake, I will discuss those that are commonly found in grocery and food specialty stores.
Table Salt:
Decades ago, this was simply known as iodized salt. This is the most refined salt that is known to have a metallic taste due to the grinding process and high-heat process to produce it. It is almost pure sodium chloride and has the highest per-granule sodium content of all salts. When used in cooking, the cook generally will use too much due to this refined grind size. I recommend you never cook with standard table salt.
Sea Salt:
This salt type is made by the evaporation of seawater which results in the retainment of natural micronutrients. Unlike table salt which uses a high-heat process, sea salt provides minerals of iodine, magnesium, calcium, potassium and bromide. There are many different grind levels in sea salt and each of those, affect the taste, color, and mouthfeel of the salt itself.
Kosher Salt:
Known for its ability to distribute evenly on the surface of food, kosher salt is harvested by mining dried up ocean and sea beds. It has a much coarser grind than table salt, which is considered flaky (For cooks, it is reliable, consistent, inexpensive, and pure).
Finishing Salt:
Just as the name implies, this type of salt is used only when a dish is finished, for instance, sliced tomato with mozzarella and basil, grilled to perfection steak, and even watermelon. Therefore, it is considered a very light tasting salt.
Tamari and Soy Sauce:
I am including tamari and soy sauce as these are very common substitutes for salts in sauces used for barbecue. Sometimes, soy sauce is used in addition to salt or garlic and onion salt for these items, making them much higher in overall sodium content. On average tamari has 700mg sodium per serving while soy sauce comes in at a whopping 1000mg per serving.
Salt Choices in Relation to BBQ Rubs & Seasonings
Hopefully, you’ve learned how to read an ingredient list on any label. The first ingredients listed make up the largest amount of the contents, while the last few ingredients make up the least. I looked at five (5) popular BBQ rubs and seasonings sold on Amazon.com to see what ingredients made up the bulk of these items and where salt rated on the ingredient list. Here are my findings:
As you can see, salt is a primary ingredient of commercially marketed rubs/seasonings for barbecue. Therefore, I always recommend that you give some consideration to making your own rub or seasoning. When produced in large quantity, you can keep these in the refrigerator for up to a month in an air tight container. Best of all, you’ll have the peace of mind knowing you can control the level of sodium in your meal.

Does BBQ smoke color mean anything for flavor outcome?
The quick answer: absolutely! Let’s take a closer look at the finer points of smoke vapor colors.
If you’ve purchased a smoker, you’re likely familiar with the term “water pan”. If, however, you’re more of an LP/Gas Grill person, than this term is likely one that escapes your knowledge.
Water pans are a means of introducing valuable moisture into the cooking environment which has immense value when grilling and smoking. Let me explain each of the pros of learning and using a water pan for your outdoor cooking, no matter the type of equipment you’re cooking on.
Temperature control. This is the ultimate need when you grill or smoker, especially when you smoke. Maintaining a stable temperature that you’ve predetermined. When the day is scorching hot and the equipment is made of metal, you will experience a challenge with temperature control. Introduce a water pan, and your battle can be won.
A water pan goes above the heat source. If using a charcoal grill or charcoal/wood smoker, this pan would be placed above the coal area. Have an electric unit and you’ll find the pan over the electric heating element. If you want to introduce a water pan on an LP/Gas Grill, this would be placed over the lit burners. Many vertical smokers come with a water pan.

Water cannot go above the boiling point which is 212°F. Additionally, evaporative cooling also takes place as the water is exposed to heat.

A water pan can become the number one tool when doing direct heat cooking over an open flame. Why? It acts as a repellent for the flame giving your foods a chance to survive without becoming a blackened, dried out, former piece of food.

Are you having trouble with hot spots in your equipment? Well, a water pan will even them out. Now, the temperature you desire can essentially be locked in just by using a water pan.

Humidity that develops from the use of a water pan keeps the surface of the meat moist, which in turn, attracts smoke vapor, which in turn, produces great flavor. The water vapor mixes with the combustible gases which are emitted from the burning material and add to the overall flavor. Yes, water is a passageway to all things flavorful!
What Goes in the Water Pan
It’s called a water pan for a reason. It is designed to hold water, specifically hot water to keep the cooker from wasting energy on heating cold water put in the pan. Here’s a tip when you fill the water pan: use a teapot to fill the pan while it’s in place so you don’t take the chance of spilling hot water on surfaces or you. Remember, water evaporates while other liquids don’t evaporate.
Don’t Make the Water Pan a Drip Pan
Here’s the thing with a drip pan. Due to its location directly over the heat source, when used on vertical units it often serves double duty as a drip pan. Don’t do that! Here’s why. The rendered fat drippings can produce an oil slick on the surface of the water which will prevent water evaporation.
Make Cleaning a Snap
Here’s a couple of tips when using a water pan. If your unit comes with a water pan, line it in aluminum foil which will allow you to simply pull the foil off and preserve the condition of the original pan.
If you’re using a unit that has no water pan but want to introduce one, simply purchase a disposable foil pan. You will want to purchase one that is compatible in size to the unit your using, that will fit comfortably over the heat source, and that can hold enough water to prevent you from having to make refill trips every 15 minutes.

What does water pan do in a smoker?
A water pan induces moisture directly into your smoker as an ally for the indirect dispersion of heat. Never use your water pan as a drip pan. Remember- drip pans = a collection unit for residual or run off grease from the cooking process; a water pan = water for moisturizing foods.
The foil pan for smoking is the handiest and, we believe, the indispensable part in all the stages necessary for cooking, functionality and sanitary purposes.
Many people have their favorite tool when it comes to outdoor cooking. It might be a wireless thermometer, specific grill grate, awesome fire safe gloves, or the go-to chimney starter. For me, it’s likely the least expensive item you can think of – the disposable foil pan. I’m going to list for you my top 6 uses for a simple and inexpensive foil pan.
WOOD SMOKERS & GRILLING- RETURN TO THE BASICS! – I recently received an email from a new customer who was questioning the moisture level of the wood she recently purchased. Her claim was, she thought the moisture wasn’t ideal as she was finding that the wood chunks “weren’t catching fire.” That got me thinking that despite what we publish for information on the various methods of wood-fired cooking, when it comes to smoking, the very basics of this method may not be understood, as well as the basics of grilling with wood.
My goal with this article is to remind you of what is needed to be successful with each type of wood-fired method.
One of the knowledge areas I feel is weak is understanding what is needed from the wood for different styles of wood-fired cooking. Let me get you educated.
Smoking
Hopefully you know that hot smoking means you are cooking with wood material to affect the color, aroma, texture, and flavor of the food. This method requires a lower temperature, a longer cook time, fuel for temperature and wood for flavor. Certainly, you can use wood for both flavor and fuel but a more cost-effective method is to use charcoal or briquets for fuel and wood just for the flavor, aroma, color, and texture to food.
For cold smoking, you still need the same items listed above but the temperature needs to be under 80°F which means the fuel is often wood which will flavor, color, provide texture, as well as the minimal heat level.
What’s the difference for these methods? Moisture of the wood product.
Hot smoking needs hardwood that is at least 20% moisture and preferably under 30%. Cold smoking needs hardwood that is under 15% moisture.
Wood-Fired Grilling
This method of grilling generally requires the use of wood both for higher temperature and for flavor. Here’s a big difference with this method: you can vary the type of food used on the grill but how you position the food to the active fire versus the hot coals is another need. Often operators of a wood-fired grill will have a couple of stations to the fire. One will be direct fire or flame cooking. This is for mostly animal proteins that you want to get a great char on the outside while cooking relatively quickly. Then there is wood grilling with the hot coals from the fire. By raking hot coals to one side, you can direct fire items that need less char to them like fish, vegetables, fruits, etc.
Another option with wood-fired grills is you can do both direct heat cooking and indirect. These two methods can also be done directly on cooking grates or by using grilling accessories like high heat tolerant cookware, grill baskets, and grilling pans.
Animal Protein Preparation
Everyone has their own preference when it comes to preparing meat or poultry for the grill or smoker. But did you know that marinating meat or poultry should be done for shorter periods of time not over night or longer. Why? Marinades contain oil and meat contains water so… just like the old saying “oil and water don’t mix”. Don’t take a risk of breaking the fibers down too far and stick to short marinating times. Don’t forget – any marinade left in the bag or pan after removing the meat or poultry should be discarded as it CANNOT be reused due to bacteria growth potential from exposure to raw product.
Now if you’re thinking about a dry rub, feel free to marinate just as long as you want. In fact, I’ve been known to marinate up to 3 days!
A wet rub, however, goes by the rule of a marinade. If you’ve included oil in that rub, short marinating time is best.
Wood Smokers- Wood Quantity Doesn’t Make It Better
If you’ve made the commitment to introduce wood flavor to the grill or smoker, then know up front, it doesn’t take a lot of wood to add flavor. As mentioned at the start of the article, you need to be sure you select the right wood chips, chunks or charwood with the right moisture level for the right application.
When smoking, about 6 ounces of hardwood is ideal to start. Although you may need to add wood during the cooking process dependent on what your cooking (larger cuts of meat may require you to feed additional wood every hour), always start with a reserved amount.
When grilling, the same quantity of wood applies – about 6 ounces. Wood is the ingredient that works with the other flavors to bring out a balanced wood-fired flavoring of the food. Put too much wood on and you’ll have food that tastes like an ashtray. Put wood on that contains too much moisture and it will produce an acrid smoke that will leave bitter flavors and black coloring to the skin or bark.
Let’s summarize. Decide what method of wood-fire cooking you plan to do, if you plan to set up a direct cooking method or indirect, and the hardwood you plan to use. If smoking, plan on that hardwood to smolder given a moisture level of at least 20%. If wood grilling, plan on that hardwood to be drier, between 15-20% to allow it to release flavonoids quickly. Start with about 6 ounces of wood regardless of the method you select and add only as the previous wood has combusted. That’s the basics to having a fun, positive experience no matter what you elect to put on the grill or smoker.

ARE FRUITWOOD TREES LIKE THE APPLE “SNOW WHITE” BIT INTO?
There is a fierce debate out there about the use of fruitwood trees, specifically apple and cherry varieties, for cooking purposes. As a Company, we frequently get the same question – “Why don’t I see Applewood as an option to purchase?” Here’s the short answer: We do not, and will not, produce our products from orchard-based woods. Our reason is simple – we do not believe in smoking foods over woods that have been or have the potential to be sprayed or growth enhanced with chemicals.
Trees
Let’s review a fact about trees. All trees produce prussic acid, better known as hydrogen cyanide. We feel that humans can use woods produced in nature when they have been left alone, unburdened by the human hand in trying to manage what sometimes is the normal cyclical pattern of nature. In the areas in which we purchase the heartwood for our cooking wood production facility, the varieties of cherry (Prunus pensylvanica L.f.) we commonly deal with are:
Northern Pin Cherry, Fire Cherry,
Wild Red Cherry, and Pigeon Cherry.
Of course, predominately, we bring in Wild Red Cherry. There are many different cherry tree varieties available throughout North America. The main difference in these woods is that our forest trees, the type we manufacture, tend to be on the sweet-tart side versus the sour-bitter. For the most part, hydrogen cyanide is found mainly in the leaves and seeds of the cherry tree. Black Cherry bark is also commonly used in herbal cough remedies.
Opinion:
The dominant opinion is that when used in small quantities, the hydrogen cyanide is a moot issue. Now let’s talk about the smoking application of wood. Cyanogenic compounds WOULD remain a factor in our production of cooking wood. This is because we do not allow our woods to deplete their moisture content to a level that other wood product manufacturers may (what is commonly referred to as “seasoning of the wood”).
For ideal smoking of foods, wood needs to have a moisture level preferably at ~20%. This results in the wood smoldering rather than burning at a rapid rate. The resulting smoke from the plant material provides for that wonderful flavor. Because smoking is done at low temperatures for longer periods of time, the polycyclic aromatic hydrocarbons (PAH’s) found in wood molecules are not stimulated as they normally would be when cooking, say, a steak over a hot flame. Thus, the health risk associated with PAH’s and smoked foods is not considered an issue. The same can be said for ember cooking – using the heat of the residual coals to cook foods.
OUR CONCERN:
Our main concerns regarding woods used for wood-fired cooking methods is to always ensure a bark-free product. Bark does not hold moisture but rather is designed to rid the tree of wastes by absorbing them and locking them into this area. In fact, this is the reason why bark-on woods burn so much faster than bark-free wood pieces. This portion of the tree is responsible for temperature flare-ups, tainted smells, ‘spotty’ appearance of the food’s skin, creosote, an increase in the production of ash. Additionally, once the temperature is increased during wood-fired cooking, heterocyclic amines, or HCAs, are created due to the reaction of the amino acids and creatine with the higher cooking temperature.
In a nutshell, a person is at greater risk of cyanide exposure in treated wood products for home construction than they are when consuming BBQ or other wood-fired foods. Knowing the source of the wood being used in the cooking application is vital to ensure that the necessary steps have been taken to prevent tree disease and pest infestation spread, as well as to ensure that the wood has not been exposed to any chemical/toxin treatments.
It is our hope, that one day soon, inspection of the wood products used by restaurants, caterers, BBQ competitors, and grocery stores who promote smoked and natural-wood fired foods, will occur as normally as food inspections. After all, I think we all can agree that WHAT you cook the food over is just as important as what food you are cooking!

Recently, I received a very interesting question regarding the safety of ingesting foods and beverages that have been exposed to smoke vapor using hand-held food smokers. Specifically, the question consisted of whether you need to be 18 years of age for items that have been infused with smoke using these gadgets.

This got me thinking:
does the word “smoke” automatically give off the bad vibe response?
why do people only inquire about the smoke without needing to know more about the plant source that produces that smoke?
There is a lot of data out there on carcinogenic effect to high heat grilled foods like burgers, chicken, and steaks, even data on hot smoking foods at lower temperatures. Really, what it all boils down to is, if you grill meats to the point where you blacken them, that increases the risk for the carcinogens. Even if you cook to the blacken state, eating these foods in moderation will halt any real risk over an average person’s lifetime.
So why the question on legality to consume smoked foods and beverages?
You are not cooking the food by this method, merely infusing it with the smoke flavonoids, so there is no temperature (cold smoking technique). You are not exposing the food to smoke vapor for hours – it really comes down to minutes. Most importantly, you are not directly attempting to inhale the smoke vapor into your lungs. Yes, if your standing near the container that is holding the cold smoke when you open it, you will have some exposure but not like the person that takes a drag directly from a tobacco product or is chewing on a tobacco product!
Like anything else in our world, there are risks to everything we do, experience, sense, taste, explore, desire. Hot smoking is another name for roasting just at a lower temperature and usually with cheaper cuts of meat.
