If you’ve been a follower of our recipes and techniques for a while, then you’re aware of our preference to grill, smoke, coal cook, and ember fire in-season produce. Peaches are no exception and with our Grilled Peach Salad, get your taste buds ready for a real treat!
I’ve got my two quarts of fresh peaches and a plan to grill these on the charcoal grill using charwood coals. Then I’ll use my luscious smoked peaches in a salad that features two additional seasonal ingredients – tomato and shallots.
Get your chimney starter of charwood or charcoal and meet me at the grill for this quick technique and grilled peach salad recipe.
Whenever you use the charcoal grill, it’s always best to get it lit about 30 minutes ahead of cooking. I’m using a kettle-style grill made by Stôk that has a removable center grate for an assortment of inserts. I won’t be using any inserts for this cook as my peaches for the grilled peach salad recipe will stay in a disposable foil pan for easy cooking and removal.
Start by placing charcoal or charwood in a chimney starter. Place a Firestarter in the charcoal area of the grill and place the filled chimney starter over the starter. Lite the Firestarter and allow to remain in place until all the charwood has ignited and started to reduce to hot coals. While that’s burning, let’s prepare the peaches. Be sure you have a couple of wood chunks available to add to the coals when we are ready to grill. I like to use the single filet wood chunk size from SmokinLicious®.
Tasting Notes: there are differences in charcoal so be sure to use a natural charcoal or charwood product rather than briquets as briquets will produce more heat than you need.
Perfect Peach Bites
With our charcoal grill going, it’s time to start on the peaches. There are a few ways to remove the skin from peaches including placing them in hot water for a few minutes then removing and placing in a bowl of ice water. The skins will just peel off. I’m an old school so I use a sharp paring knife and just remove the skin.
Once the skin is removed, it’s time to cut the peach into bite-size pieces. You can easily cut around the pit and cut those slices into pieces. Place all the pieces in a foil pan in an even layer.
Tasting Notes: Try to purchase peaches that have some firmness to them if you don’t plan to grill them right away. The peaches should have no bruising and have a slight give when touched. Too soft and those peaches won’t hold their shape when exposed to the grill’s heat.
Smoking Process for the Perfect Grilled Peach Salad
With the peaches prepared, time to take them to the grill. Pour the chimney of hot coals into the grill’s charcoal area and add the wood chunks. Add the pan of prepared peaches and placed the lid on the grill. Be sure the outtake vent on the lid is ½ way open. The intake vent at the charcoal area should be ¼ way open. Now allow smoking for 15 minutes prior to checking. Remember, we want to add smoke without reducing the peaches to a puree.
Tasting Notes: Since peaches contain 89% water, they take in the smoke vapor extremely well. Keep that in mind when you select both the charcoal and wood. Remember, oak based charcoal tends to burn hot and has a stronger undertone to fruit.
Final Salad Prep- Grilled Peaches for the perfect salad addition!
While the peaches are absorbing all that great smoke flavor, return to the kitchen and prepare the remaining ingredients for our salad. You’ll need:
1 lb. tomatoes cut into 1/2’” pieces; or if using cherry or grape tomato, halved
3 tablespoons extra virgin olive oil, plus additional for final drizzle
2 tablespoons rice vinegar
½ teaspoon lemon zest
1 tablespoon lemon juice
1 shallot, sliced thin
fresh mint leaves torn
salt and pepper
I start by slicing my tomatoes in half, then add a teaspoon of salt to them while sitting in a colander so I can render some of the water. While the tomatoes sit, I start slicing the shallot into thin strips. At this point, you’ll want to check the peaches. They should be close to or ready to remove from the grill. I like to place them in the refrigerator for about 10 minutes to cool them down for the salad. While that’s happening, let’s prepare the vinaigrette.
I prefer to mix all the vinaigrette ingredients in a measuring cup so I can easily pour it to the salad right before serving, to keep the tomato and peach from getting too soggy. Start with the extra virgin olive oil and add the rice vinegar. Next, the lemon zest, lemon juice, salt, and fresh pepper. Whisk it all together and set aside while you combine the salad ingredients.
Tasting Notes: you can substitute cider vinegar for the rice vinegar and any color of tomato will do though I lean toward the reds and purples to give a color contrast from the orange peach.
Smoked peaches go into the serving bowl first, following by the tomatoes, and shallots. Pour the vinaigrette over the salad within an hour of serving and top with the torn mint leaves. A perfect balance of sweet, tart, smoky, and refreshing. An easy method and recipe you can have in 60 minutes. I love peaches so try our grilled peaches for the perfect salad addition for your next dish to pass! You will tantalize the guest taste buds!

ODE TO GRILLED FAVA BEANS
I love when the ideal weather comes around when at the same time there are so many options for fresh produce either at the Farmer’s Market or local grocery store. I tend to lean toward my grill and smoker for most of my cooking when the weather turns hot and steamy.
Beans are one of those vegetables that are spectacular on the grill but they get even better when you add a few wood chunks. I’ll show you how to prepare Fava Beans for the grill and give you my easy, fool-proof technique for incorporating wood chunks for flavor.
Before preparing the Fava beans, get the gas grill heated by turning on only half the grills’ burners which will be the side that radiates out the heat and holds the smoker box. For the smoker box, I’m using a stainless-steel model that has a hinged lid. I place 3 double filet wood chunks from SmokinLicious® in the box in a combination of woods. I’m using hickory, white oak and sugar maple to give me a great smoke balance to the beans. This will ensure I don’t overpower with the smoke vapor. By placing the smoker box with chunks on the grill grate as it preheats, it will be smoking by the time you have the beans ready.
Simple Bean Prep for Grilled Fava Beans
There is little to do with the Fava beans before they go on the grill. Wash them to start to make sure all the dirt and debris is removed. Pat dry with a paper towel and then move them to the cutting board. Remove any leaves and cut just the stem end to remove the stem. Place in a disposable foil pan, spread out evenly, and add roughly 6 tablespoons of butter to the beans, as well as salt and fresh ground pepper. That’s it. Leave the bean pods intact as they are going to act like a miniature steamer to cook the beans and ensure they don’t become over smoked.
With the grill heated and the wood chunks smoking in the smoker box, place the pan of beans on the unlit side of the grill and close the cover. Check that your grill temperature steadies out at about 375°F. If lower, simply increase the heat setting on the active burners. Too high, decrease the heat setting. Leave the beans untouched for about 30 minutes. Return to the grill, stir the beans and check the wood chunks. If the chunks are still emitting smoke, close the grill lid and leave for an additional 10 minutes or so, or until fork tender. Remove the pan from the grill and allow to cool for about 10 minutes.
Grilled Fava Beans- Buttery, Smoky Finish
After the beans have cooled enough to be handled, take each pod and push the beans out one end into a bowl. You may keep the empty pods to use for making broth or for puree in a sauce or smoothie. These Fava beans are now ready for you to enjoy as is or use in your favorite recipe. Now, I’m taking my Fava beans and making a dip with goat cheese, lemon and tarragon.
You thought you timed the meat perfectly on your smoker or grill. When it came time to cut it, all you found was a gray, dry former piece of meat staring back at you.

COAL FIRE CAULIFLOWER BY COOKING ON A CHIMNEY STARTER

A cousin to broccoli, #cauliflower is one of those vegetables that can be eaten raw or cooked and converted to so many different textures. Best yet, cauliflower is one of those super cancer-fighting foods as it contains sulforaphane known to kill cancer stem cells.
I’ll be taking my head of cauliflower and introducing it to hot coals, first, direct heat using a #chimneystarter for the actual cooking and then directly on the hot coals to give it the perfect “meat” char. No matter what color you enjoy – white, yellow, purple – grab a head and get your chimney starter ready, as I show you how to use a chimney starter as an actual grill.
Cooking on a Chimney Starter: Why a Chimney Starter?
There are times when you really don’t need to fire up a full charcoal area of coals on the charcoal grill. I have the perfect solution when you’re doing just a small quantity of a food, like our head of cauliflower. Use your chimney starter
To start, I place a mesh screen on the charcoal grill grate to help retain the small, hot coals for cooking. I have a collection of micro charcoal pieces that work perfectly for this type of cooking.
After lighting a Firestarter, I place the charcoal filled chimney starter on top of the Firestarter and allow the coals to burn down to hot embers. Hot embers are what I will be using to cook my fresh cauliflower, first, directly on the chimney starter, then on the mesh screen once I dump the hot embers from the chimney starter.
Charcoal that is produce properly is a fuel and provides heat! Wood adds flavor!
WHY CHARCOAL IS NOT AN INGREDIENT
There are so many methods of getting a message out rapidly given the speed of technology and the many platforms for posting opinions and marketing strategies today. In doing research for a publication, I came across a statement made by a charcoal company that made me a bit … confused.
An Ingredient Not A Fuel
This company claimed that their product was an ingredient, not a fuel!
Not a fuel? That statement is in direct conflict to what charcoal manufacture was designed for – heat.
I realize that when used with 100% accuracy, charcoal will produce no smoke and a consistent heat. We all know that the 100% accuracy is the kicker – pretty much no one is proficient at producing full ignition of the charcoal with stable air intake to maintain the high heat level the product was designed for. What usually occurs is that we start out with full ignition but given the need for longer cooks, we add charcoal and thus, start to fluctuate the oxygen feed. Only during those fluctuations does the production of smoke occur with charcoal.
Non-Carbonized Wood IS Flavor
Charcoal production is the act of carbonizing wood which means all the volatiles of the wood is burned off until what is left is pure carbon or at least a high percentage of carbon. There is no refuting that it burns cleaner, hotter, and more evenly than wood only.
Here are where differences occur though when it comes to types of charcoal.
Lump charcoal is made from various scrap wood sources like furniture manufacture, a wood packaging manufacturer, the flooring manufacturer, and building material scraps. Due to the high level of variation in these pieces, most often there is not 100% carbonization of the lump charcoal production. That’s why you can get some smoke and flavor from that product; when combustion of a non-charred piece occurs, you’ll stimulate organic compounds that produce flavor. Keep in mind, because scrap wood is used you can get other debris in the purchased bag as often this is scooped up from a site and transferred to a production facility, with the scoop gathering anything that may be in the area.
Traditional charcoal manufacture also known as briquets is also made from scrap wood, sawdust and wood chip product. It is known that some manufacturers include a percentage of softwood but for the most part, the product is derived from hardwood. Briquets do have binders added and there are some types that have accelerants added to make them extremely quick to lite. Personally, I can detect those additives and feel they do change the overall flavor when cooking foods over them but you can make that determination for yourself.
Controlled flavor only comes from wood and the best and safest flavors, from hardwood. Charcoal is a fuel, it is for heat, and the only flavor it produces is when meat/poultry drippings fall directly on the hot coals and vaporize, stimulating flavors. Never are flavors stimulated from the briquet or charcoal.
So, Who Is The Ingredient?
If the definition of an ingredient is a substance that contributes or makes up a mixture, then truly hardwood, regardless if it cooking wood form is in chips, chunks, logs, dust or charwood, is an ingredient in wood-fired cooking recipes as it gives off its distinct organic flavor compounds that make up the cell structures. Heat is NOT an ingredient and that is what charcoal is: HEAT! A claim to be an ingredient just holds no truth.

It’s time to bring a smoky flavor to one of my favorite though limited in availability, vegetables – smoked okra! Known as a super healthy food but one that sometimes confuses people on how to cook and eat it, I’m going to bring you an easy method of tenderizing and infusing okra with a pleasant smoky flavor that doesn’t stimulate the sticky juice known to lurk inside.
Though I’m going to use a stove top smoker for my infusion, you can easily adapt this method to the gas grill, charcoal grill or electric smoker using a vegetable basket or tray. Seek out some vibrant green, firm okra and let’s get started on a new way to cook and flavor this healthy vegetable.
Smoker Set Up for Smoked Okra
I’m using my Nordic Ware Stove Top Kettle Smoker for this hot smoking method. To start, I place the smoker base on the unlit burner and add about ¼ cup of Minuto® Wood Chips– I’m using a #6 in Sugar Maple – from SmokinLicious®. I place the drip pan on top of the wood chips and then ensure the food insert pan is clean and dry. For vegetables, I usually use a medium heat setting on my stove – I have a gas stove top. This will register between 200-250°F on the kettle smoker’s temperature gauge. Next, I’ll do a simple preparation to the okra and we’ll be ready to turn on the heat to the stove top unit.
Tasting Notes: For the charcoal grill set up, use a two-zone cooking method – charcoal and wood lit on one half of the grill while the vegetable tray or basket containing the okra will go on the unlit side of the grill. Do the same set up on the gas grill. For the electric smoker, be sure to use a lower heat setting – around 180°F.
Smoked Okra- Trim and Smoke
Nothing could be simpler than the preparation for okra. You’ll want to ensure that the outside is clean and dry so a simple water wash is good with a pat dry. I like to remove the stem top to allow penetration of the smoke vapor into the center of the pod.
Place about one pound of fresh okra with the stem tops trimmed into the smoker’s food tray. Try making an even layer of pods so the smoke vapor can flavor the pods evenly. Cover the kettle smoker with the lid and turn the burner on to a medium setting. I use my stove’s vent on high to keep the aroma down somewhat.
Allow the okra pods to tenderize and smoke for about 20 minutes before checking. You just want them to be tender (not falling apart), to where a knife can still cut them into pieces. Once done, remove the pods to a bowl and use these in recipes calling for okra or you can serve as is with a favorite sauce.

The Wood-Fired Environment
There are many choices in equipment for working with a wood fire but each has different material components that determines how much work would be involved to cook on the unit. Here is the primary point when you’re selecting equipment for live fire: how will you cook on that equipment?
If your plans are to always do indirect cooking whereby the source of heat (fire, coals) will be on one side and you will cook on the non-heat side (in my opinion, the preferred method for all cooking), then know that most any equipment selected will work. However, the time for the equipment to heat up may play a factor, as the heating time is directly related to the insulation of the grill. Plus the amount of radiant heat it can hold.
If a unit is manufactured from heavy metal, brick, clay, or ceramic housing, then it will perform exceptionally by giving radiant and retained heat. Why is that important? Because producing retained and radiant heat means less fuel consumption and even cooking results.
The Kettle Grill
For thinner material grills like the traditional kettle grill which are very popular, low cost, and preferred
by many, you can compensate for the potential heat loss and improve efficiency by adding fire bricks to the walls and floor of the grill. You will simply start your live fire directly on the fire bricks rather than the charcoal grate. Fire bricks will work well in any grill that could improve on its insulation.
Drum/Barrel Grill
The overall cooking space in a drum/barrel grill is larger than that of a kettle grill. However, just like any metal material, there are different grades so quality can be variable. Same rule applies to these grills: if the insulation is not great, add fire brick to improve the performance.
Box Grills
These units are traditionally made of high heat metal with a deep, metal charcoal pan that includes grid and vents. A grilling grate is suspended above and there often is a lid to the unit.
Fire Set Up
As I’ve stressed before, a good fire needs 3 elements: fuel (wood, charcoal), oxygen (air intake vents), and heat. As with any fire cooking, a small, hot fire is ideal.
Double Filet Wood Chunk
To start your fire in one of these pieces of equipment, first open the air intake vents at the base of the charcoal firebox area. This will ensure that oxygen can stimulate the start of the fire. Since this is an enclosed firebox area, the size of the wood pieces may need to be adjusted from what you would commonly use in a fireplace or fire pit/fire ring.
I like to use the log cabin method of starting a fire with this equipment. Lay 2 longer pieces of hardwood parallel to each other with about 3 inches of air space between them. Lay 2 more hardwood pieces on top perpendicular to the first pieces. Place the last 2 in position to match the base woods’ alignment. In the center, add a pile of tinder which can be hardwood chips, pine cones, even newspaper if need. Again, I like to use wood in its natural form as much as possible. Pile some kindling size wood pieces on top of the tinder pile. You can drizzle vegetable oil on top of the kindling and tinder to assist with ignition which proves helpful if you plan to light with a long wooden match. I prefer to lite my fire using a MAP torch.
Don’t Rush It
It is imperative that you allow the fire to go through the full stages of combustion before you introduce foods to the cooking grate. Too much flame and smoke will ruin the foods. The ideal is to wait until the fire burns down to glowing embers. If your equipment has the room in the firebox, rake or shovel some of the hot embers to one side and add just a small quantity of additional hardwood to keep the heat steady. The rest of the hot embers are what will be used to cook with.
Position the foods based on the heat needed for the cooking. Meats will require more of the heat while vegetables and one pot dishes will take the medium to low heat. An infrared thermometer will aide with knowing heat levels in your equipment or you can use the hand test: hold your hand over the coals the distance your foods will be. If you can only hold your hand for a count of 2 seconds before you need to pull it away, that is high heat. 3-4 seconds is medium-high, 5-6 seconds is medium and 7-8 seconds is low heat.

It’s long been the equipment associated with the guys. Perhaps it’s due to the primal start of cooking over the live fire which initially was a man’s skill. Hunt the animal and cook it on fire and hot coals.
Recently, the trend has begun to turn around in favor of more women chefs cooking components of a meal on the grill. In fact, it’s not just the traditional LP/gas grill but charcoal grills as well, as women chefs take their new recipe and technique finds out of the traditional indoor kitchen and to the outdoors.
Just Because It’s Outside Doesn’t Change The Purpose
There is no question that outdoor grilling equipment has evolved into something of a fantasy. We now have choices beyond the standard LP, natural gas, charcoal, and electric grills. Many brands are now featuring dual fuel cooking, meaning they may have gas or electric assist but use wood and/or charcoal for heat and flavor!
What does this mean for the ladies who want to do the more outdoor cooking on the grill?
Versatility! It is so easy to cook an entire meal on the grill without it taking several hours or more.
Accessorize!
The key to ensuring that an entire meal can be cooked on the grill is to have the right tools and that includes some accessory items. Let’s look at each recommended item and answer the question why it’s important to the woman’s full meal grill event.
#1 Grill Grate Accessories:
First up, the grill pan, grill basket or grill topper. These are perfect for vegetables and fruits making it so easy to ensure that the food doesn’t stick to the grill grates and that every piece gets cooked evenly. Plus, since many grills are now sold with a side burner, you can always steam or parboil tougher vegetables first, then transfer to the grill pan/basket/topper. Or, use that side burner to make rice for a healthy starch side. Don’t have a side burner on your grill or are using a charcoal grill? Then buy a butane burner! These are so inexpensive yet give you another cooking option to get everything ready at the same time.
#2 Easy Charcoal Lighting:
If you don’t know what a chimney starter is, time to learn. The charcoal chimney starter is the best way to light a charcoal fire. Although these traditionally use newspaper at the bottom (for ignition) and load charcoal chunks (can be briquettes or lump) into the body of the unit, I take a simple method of lighting my chimney. I load with my favorite charcoal and use a butane torch under the unit to light – no newspaper needed. This allows me to leave the butane on auto fire for a few minutes to ensure the lower coals are lit. Simply pull the torch out, shake the chimney while wearing fire gloves, and return to a heat safe surface until the top coals turn white-gray. Oh, and you can always light the chimney off that side burner too!
#3 Purchase 2 Thermometers
Stop guessing at when things are done! You need to invest in 2 quality thermometers; one for the grill/smoker and one instant-read for the food. Be sure the thermometers you invest in can take a reading in 5 seconds or less, have at least a 4-inch probe for thicker cuts of meat, and have cables that are durable (if you don’t go with a wireless), especially for equipment thermometers that are placed through venting holes or under lids.
#4 Silicone
Anything made from silicone will become a lifesaver at the grill. Silicone pot handles covers, spatulas, heat resistant tongs – you get the idea. This material can handle the high heat of grills so stock up on those items you’ll need and use the most. Suggestions? Tongs, pot handle covers, spatulas, spoons, mat.
Diversify!
Grilling does not necessarily mean you must put all foods on the grill grates. Use high heat cookware to help you out. Think cast iron or high heat clay and enamels meant for the grill. These are perfect for starting one-pot wonders like legumes, pasta dishes, even sauces. With a roomy enough grill, you can fit many different items – grill pan/basket, Dutch oven, and rib racks. Don’t forget most grills come equipped with a lower and upper grill rack so more fragile items that need less heat can go to the top. Here are some tips on food to cooking equipment match:
Tip #1: Cast Iron and Charcoal
Cast iron is, without question, the best material for cooking directly in the coals. Here’s a tip – if you have an outdoor fireplace or even a fire pit that uses wood, you can do this method of cooking by placing your cast iron skillet or Dutch oven directly in the coals. Keep in mind, I said coals, not flame. Coals have a very high BTU rating and can cook foods within cast iron as if they are in the oven. Just be sure to pack the hot coals around the cast iron after placing the pan in the coal bed. Perfect items to try: vegetable medley, roasted potato, curry dishes, au gratin dishes.
Tip #2: Cast Iron and LP/Gas Grill
Just like having the side burner on a grill, cast iron on the grill is like having an extra pot on the stove. Cast iron comes in lots of sizes and cookware type: saucepan, skillet, Dutch oven. Anything you would traditionally make in cookware on the stove can be done on the grill. The key is to ensure that you have this on a section of the grill that isn’t set to “high”, as cast iron holds heat.
Tip #3: The Upper Grill Rack
Though small in overall size, the upper grill rack is designed for those fragile items or for items that require simple warming. Think melting butter for vegetables, heating sauces, warming bread and rolls. Use it! It can be of great value to keep you from needing anything indoors.
Tip #4: The Rotisserie
If you have a grill with a rotisserie, use it! Keep in mind, as that item turns on that rod, the meat or poultry renders some fantastic juices. Catch them! Put a high heat pan under the food item with some great vegetables and use the drippings to add superb flavor to the cooking process.
Women Chefs- “Flavor It Up!”
Now, let’s be clear! Unless you’ve invested in a dual fuel or hybrid grill, one that allows you to use charcoal and/or smoking wood, most standard LP grills are just that: grills not smokers. If you don’t have a hybrid but want to get some smoking woods flavoring to your foods, then start thinking of adding charcoal and wood chunks! Yes, you heard me right. WoodChunks vs. woodchips which was the product of choice for years with LP grills.
Why Smoking Wood Chunks?
Most grills today are designed with covers for the gas burners to diffuse the heat more evenly. They go by a lot of names: heat distributors, flame tamers, heat plates, burner shields, flavorizer bars. The addition to the traditional LP grill is the reason why you can use smoking wood chunks. Simply place a few small wood chunks under the grill grate right on top of the heat diffuser. Be sure you only put chunks on a burner you will ignite. Replace the grill grate and you’re ready to go! And, yes, you will get real wood smoke vapor to flavor whatever you’re cooking on the grill. I promise!

“Manning” the grill is no different than planning a meal in your conventional kitchen. Pick out the components of the meal and decide what needs to cook were on the grill: directly on the grate, on the rotisserie, in cast iron, on the coals.
