SMOKY WHISKEY COCKTAIL FOR THE HEARTY DRINKER

I’m bringing you another smoked cocktail that is deep in flavor and suited for those who like hearty cocktails.  For this cocktail, I’ll be adding even a deeper flavor to the whiskey by cold smoking it with a handheld food smoker.  A rich syrup is made first and then added to our cocktail that can be served hot or cold.  Perfect, either way, to warm you up on cold winter days!

The Syrup

To get our Harvest Smoke & Sparkle cocktail started, we need to make the sweet syrup to balance the boldness of the smoked whiskey.  In a small saucepan over medium heat, whisk together ½ cup of honey, ¼ teaspoon ground ginger, ¼ teaspoon ground cinnamon, 1/8 teaspoon ground clove and 1 cup of orange juice until it starts to bubble.  Remove from the heat and allow to cool.

If making individual cocktails, it is important to still make the full batch of cider-honey syrup and take the 1 tablespoon plus 1 teaspoon of cider-honey syrup from the batch per cocktail.

Tasting Notes: This is referred to as a harvest sparkle due to the traditional spices associated with the Fall.  Feel free to experiment and adjust these flavors as cardamom and allspice also work well.

The Construction

With the cider-honey syrup made and cooling, it’s time to take your favorite brand of whiskey and cold smoke flavor into it.  I’m using The Smoking Gun® by Breville which is self-standing to make the actual smoking process easy.

After placing the whiskey in a measuring cup, I place the measuring cup in a plastic bag and insert the hose of the smoking appliance into the bag.  I then add a pinch of Piccolo® wood chips to the bowl and turn on the unit while lighting the chips.  Once the smoke fills the bag, I shut off the unit, remove the hose, and cinch the bag closed to allow the smoke to penetrate the whiskey.  It helps to move the whiskey around in the cup to help the smoke molecules to cling to the alcohol.  That’s it!

What is so great about this whiskey cocktail is that is can be served hot or cold.  Today, I’m making the cold version in a large batch to serve many guests.  I start by adding my smoked whiskey and cider-honey syrup to a large pitcher with lots of ice.  Next, I whisk these two ingredients together well.  If making a single cocktail, add an ounce of the smoked whiskey and 1 tablespoon plus 1 teaspoon of the cider-honey syrup to a shaker filled with ice.  I strain into a serving glass and add Prosecco and a garnish of rosemary.  I prefer a bit of ice in the glass for the cold version.

Now, for those that like it hot, simply whisk together the smoked whiskey and cider honey syrup in a saucepan or heat in the microwave for 45 seconds in a mug.  This is one smoked cocktail that will take away any chill in the air!

As we wait for warmer days, I have a perfect winter cocktail that will make you content as you bear the cold.  Featuring just 4 ingredients, I’m taking a single ingredient and cold smoking it to give a smoky flavor.  We’ll use a handheld food smoker for a quick, easy means of infusing the smoke flavor.

Our Smoked Winter cocktail has just 4 ingredients:

  • cream of coconut
  • vanilla vodka
  • crème de cocoa
  • ice

By using a handheld food smoker, you can make quick time of smoking the cream of coconut needed for our Winter Wonderland cocktail.  I’m making a full batch of drinks to serve about 6 so I’ve placed 6 ounces of cream of coconut, (I like the CocoLopez brand), into a container.  That container is placed inside a plastic bag.  I’m using The Smoking Gun® by Breville which is a stand-alone, easy to control cold smoke appliance.  I simply place the smoking hose into my container, cinch the bag around the hose, lite my Piccolo® wood chips while the food smoker is turned on, and allow the smoke to fill the container.  I then turn off the unit, remove the hose, cinch the bag tight, and allow the smoke to sit for a few minutes to infuse the coconut cream.  That’s it!  Now time to assemble our Winter Wonderland cocktail.

Tasting Notes: Although I elected to smoke the cream of coconut, you can smoke one of the alcohols or even the water to make the ice cubes.  For those looking for a bolder smokiness, feel free to smoke the entire cocktail mixture before serving over ice.

Quick Shake to Yum

After smoking the cream of coconut, it’s time to mix the cocktail.  This is best done in a shaker.  For a single cocktail, fill the shaker with ice, add 1 ounce of the smoked cream of coconut, 1-1/2 ounces of vanilla vodka, and 1-1/2 ounces of crème de Cocoa.  Shake until well chilled and the flavors marry.  Strain into an ice filled glass and serve.

This is one winter cocktail you’ll enjoy sipping as you wait on those warmer days.

JACK FROST GOES SMOKEY- THE COCKTAIL!

Also known as the  winter  piña colada, the Jack Frost cocktail is perfect for introducing a little smoke flavor to.  If you like sweet, smooth cocktails, then the Jack Frost is for you.  I’ll give you the recipe and the easy technique for  smoking  the entire drink that you’ll enjoy sipping all winter long.  Pick your favorite  festive cocktail  glass and let’s take Jack Frost to the smoky side.

A Sweet Rimmed Glass

Before we can make the actual cocktail, the serving glass must be prepared.  Collect your favorite glasses, some finely shredded coconut, and light corn syrup.  With a paper towel, apply a thin coating of corn syrup to the rim of each glass.  Place a small amount of shredded coconut on a plate and dip the coated glass into the coconut.  Be sure to lift and press the glass into the coconut a couple of times to ensure an even coating of the rim.  Set aside until the cocktail is ready to be poured.

I prefer to make a slightly frozen style cocktail so I start by adding ice to the food processor, followed by 1 cup of pineapple juice, ½ cup of vodka, ½ cup of Blue Curacao, and ½ cup of cream of coconut.  Pulse this mixture until smooth or the ice is reduced to the consistency you prefer.

Tasting Notes: Although I’ve elected to use plain vodka in my Jack Frost, you’ll find peppermint vodka another great alternative that gives a particularly festive flavor to the drink.

Jack Gets Smoked

By using a  handheld food smoker , introducing controlled smoke to a cocktail couldn’t be easier.  I’m using  The Smoking Gun™ by Breville  to do just that.

Since I’ve produced a full batch of the Jack Frost cocktail, I place the cocktail pitcher into a plastic bag, insert the hose of the smoker, and add a pinch of   Piccolo® wood chips  to the device.  The unit is turned on and the chips lit which begins the cold smoke production.  Once the bag and pitcher are full of smoke, the device is turned off, the hose removed and the bag cinched to allow for full smoke infusion.  I like to shake the liquid a bit in the pitcher to be sure the smoke vapor clings to the drink molecules.

You can decide how long to leave the smoke in the bag or wait until it has completely dissipated before removing the pitcher.  Now pour the smoked cocktail into your rimmed glasses and let the party begin!

I’ve worked on a trio of recipes to take full advantage of the short seasonal harvest of strawberries we have here in Western New York State.  I’ve already shared with you my Smoked Strawberry Hand Pie and my Creamy Smoked Strawberry Semifreddo.  Now, it’s time for a refreshing cocktail that also features smoked strawberry.

Just grab a couple of quarts of fresh strawberries or even store bought when they are out of season in your area and pick your smoke technique: we have three options – the charcoal grill which is how I did my strawberries, the gas grill or the handheld food smoker.  Then prepare to make our version of the strawberry Bellini which has a trademark smoked strawberry to balance the sweetness of simple syrup and Prosecco.

Simple Syrup

After smoking the strawberries using either a handheld food smoker, stovetop smoker, gas grill or charcoal smoker – we have instructional videos on all these techniques – the next step for our Bellini is to make the simple syrup.  Taking 1 cup of sugar and 1 cup of water, I add both to a saucepan set over medium heat and stir constantly until the sugar is dissolved.  Then I remove it from heat and allow to cool.  At this point, I like to pour the simple syrup into a liquid measuring cup to make adding to our cocktail easier.

Bellini Base

Time to start making the Bellini.  I add ice cubes to a blender and pulse them into crushed ice.  I then take my smoked strawberry juice which I reserved from my previous smoked strawberries and add about 1 cup to the crushed ice.  If you’re using whole smoked strawberries, you can pulse these into the crushed ice.  After adding my smoked strawberry juice, I add about 1 cup of simple syrup.  Pulse the mixture until blended and make any necessary adjustments to ice, strawberry or syrup flavors until you have the consistency and balance of sweet and smoky that you like.  Keep in mind, you will be pouring this mixture into the glass first, then adding the sparkling Prosecco so don’t over-sweeten.strawberries and simple syrup mixture in the blender adding ice to chill

Perfect Balance

Now it’s time to bring everything together for the final drink.  First, grab a bottle of Prosecco.  Take the glass of your choice and fill it about halfway with the smoked strawberry mixture.  Fill the rest of the glass with chilled Prosecco.  I like to top my glass off with some fresh mint.  Serve immediately.  Immensely refreshing on a hot day and festive looking too. The perfect way to use less than perfect strawberries.  Cheers from SmokinLicious®!

Tasting Notes

Now, this is a drink base that easily can be adapted for other liquor content.  Feel free to add tequila, rum, even vodka.  Just reduce the hard liquor amount to 2 ounces.

SMOKY BOURBON CRANBERRY COCKTAIL

For those of you who love bourbon, we’ve got a special cocktail for the sampling.  This is a rather festive drink containing cranberry.  We add an additional layer of flavor by cold smoking the cranberry cocktail syrup for a unique blend of sweet, tart, and smoky.  Let’s get started on how it’s done.

Making Cranberry Syrup

Our smoked bourbon cranberry cocktail starts with the ingredients for a cocktail syrup.   Similar to traditional simple syrup, this one has a bit more acid in the form of white wine vinegar. You’ll need to gather together:

  • 1 cup of fresh or frozen cranberries
  • 1 cup of white wine vinegar
  • Sugar- 1 cup

You also need a saucepan and heat tolerant spoon.

Start by placing a saucepan over medium-high heat.  Add the white wine vinegar and the cup of sugar and stir to dissolve the sugar.  Next in, one cup of cranberries, fresh or frozen, though I’m using fresh as they are available at the time of this recipe.  Bring the mixture to a boil stirring constantly.  Once the sugar is dissolved and the cranberries have reduced, remove from the heat and allow to cool in the saucepan.  While the mixture is cooling, let’s prepare the handheld smoker for the smoke vapor infusion.

Cold Smoking is in Your Hand

It’s never been so easy to produce smoked ingredients with the development of the handheld food smoker.  It all began with The Smoking Gun which is the unit I will be using today, but know there are many options available to you.   I set up my handheld food smoker with Sugar Maple Minuto® Wood Chips.

Bringing the cooled saucepan to a table, I have a piece of press and seal at the ready, but you can use plastic wrap, a food storage bag, or vacuum bag, anything that will provide a seal.  I seal around the saucepan leaving a small opening to insert the tubing of the food smoker.  Turning the unit’s fan on, I light the wood chips and allow the smoke vapor to fill the saucepan.  Once filled, I release the tubing from the pan and seal the pan completely with the wrap, allowing the smoke to penetrate the cranberry syrup.  The longer the pan stays wrapped, the more smoke flavor the syrup will take on.  Once infused, remove the wrap and prepare to make the cocktail.

Building a Smoky Cocktail

To make the cocktail, place ice in a rock glass.  Add ¼ cup plus a splash of your favorite bourbon.  Add two tablespoons of seltzer and two tablespoons of the cranberry syrup.  Stir and add a tablespoon of fresh cranberries.  It’s now ready to serve!  Smoky Bourbon Cranberry Cocktail – a unique drink for all those bourbon lovers you know.

If you enjoy fruity drinks or smoothies, then the Smoked Strawberry Aqua Fresca is perfect!  Using seasonal fresh strawberries will bring this to the ultimate flavor height but any store purchased variety will work as well.  This is the perfect cocktail for a summer event or as a non-alcoholic refresher on an exceptionally warm summer day.  Get ready as we tell you how to do the smoking technique then construct this fabulous drink.

Strawberries Love Smoke

Start with strawberries that are at their peak.  Gently wash them and then trim the stem end.  I cut smaller strawberries in half and larger in quarters to ensure the smoke vapor can penetrate easily but you certainly can leave them whole.  In addition to the strawberries – at least one quart to produce enough liquid for a few drinks – you’ll need the following ingredients and materials

  • 4 tablespoons sugar – reserve some extra in case you want to make this sweeter
  • 2 teaspoons pure vanilla extract
  • Pinch of fine or coarse sea salt
  • Juice of 2 limes
  • A handful of fresh basil or mint
  • Ice cubes
  • Blender
  • Mixing bowl
  • Mortar & pestle (optional)
  • Sheet pan lined with parchment paper
  • 2 double filet wood chunks from SmokinLicious®

 While you are getting the strawberries ready you can have your grill warming up.  Set all burners to medium-low and close the lid.

Gas Grilling With Wood Chunks

Cooking with wood chunks can be done on the LP Gas Grill by using the heat shields or diffusers, whose purpose is to ensure even heat output over the grill grate.  By keeping a medium-low heat on the burner containing 2 wood chunks from SmokinLicious®I’m using 1 ash and 1 cherry – you won’t get the wood erupting in flames but rather a slow combustion that releases plenty of wood-fired flavors.  While the wood heats up, I combine my strawberries with 2 tablespoons of sugar, 2 teaspoons of vanilla extract, and a pinch of sea salt.

Get Ready For Juicy Bubbles

When you smoke strawberries on the grill, all the locked in pectin water will be released by the heat.  That’s why it’s so important that you line your sheet pan with parchment paper so you don’t end up with a hard to clean mess.

After mixing in the vanilla extract, sugar, and salt it’s time to spread the strawberries onto the lined sheet pan and place on the grill.  Once the pan is in place, turn off all the burners except for the one that has the wood chunks on the diffuser. Cooking time will be about 40 minutes with a grill heat of 300°F maintained with the lid closed and 1 burner lit.

Taste Is The Sweet Aroma

Whenever I smoke fresh strawberries, it brings the memory of my Mom making strawberry jam.  As the strawberries react to the smoke vapor, you will see the pectin release and a beautiful, thick glaze will form around them.  This is the stuff that will make an exceptional aqua fresca so be sure you don’t lose any when removing the pan from the heat.  You’ll see the finished strawberries take on a much darker coloring and reduce size slightly from the water loss.  Now get ready for the fun part – getting our drink together.

To start our drink creation, you will need a blender and I prefer a mortar and pestle for combining citrus and fresh herbs.  Add the smoked strawberries to the blender and the remaining sugar. You can add the lime juice and fresh basil or mint right to the blender or add to a pestle and combine with the mortar. Once combined, add to the blender. Process the mixture.  Add a few ice cubes and process again until a smooth mixture is revealed.  You may add lime juice, sugarand ice as you see fit at this point – the recommended amounts are merely a guide.

Creating the Ultimate Aqua Fresca

With our strawberry mixture completed, it’s time to combine everything into a refreshing drink or cocktail.  If making a cocktail, select your spirit of choice.  I recommend tequila, vodka, or rum.  Add some ice cubes to a glass.  If making the alcoholic version, add an ounce of alcohol to the glass. Pour in the strawberry mixture and stir.  Add a sprig of basil or mint to the glass and serve.

If you are a frozen drink person, add more ice during the blending stage to thicken this up and make a milkshake-like consistency.  This is so refreshing and so fitting for the warmer months.  Enjoy the Smoked Strawberry Aqua Fresca your way as you stay cool this summer season!

SMOKED KIWI CAIPIROSKA

The warmer season means we all look for new cocktails to serve and enjoy during the longer days of sunlight.  For those of you who are a fan of the fruity cocktail, why not take a less traditional approach and bring a new flavor level in.

Kiwifruit Gets A Smoky Start

Caipiroska is a popular drink in South America consisting mostly of vodka, sugar, and lime.  I thought I’d give you a less traditional recipe featuring kiwifruit.  Start the ultimate caipiroska by introducing a depth of flavor by smoking the kiwifruit.  We show you how in our previous posting.  Next, we’ll balance out the bolder smoke with an assortment of sweet and fresh ingredients.  Let’s get the list together.

Gather These Ingredients:

  • 2 cups smoked kiwifruit, peeled and diced
  • 12 mint leaves
  • 2 tablespoons of sugar
  • 3 limes
  • 2 cups high-quality vodka
  • 2 cups tonic water, seltzer, or coconut flavored sparkling water
  • Ice cubes
  • Mortar and pestle
  • 1 kiwifruit peeled and thinly sliced for garnish

Muddle For Ultimate Aromatics

Taking a teaspoon of sugar, 2 mint leaves, and 1/3 cup diced smoked kiwifruit, I add this to a mortar and pestle.  Next, squeeze in ½ lime juice, then muddle the ingredients together until a chunky mixture is revealed.  This is the part that allows you to experience all the aromatics of the fresh ingredients coming together.  Gives you an idea what your taste buds are in store for!

Time for the Pour

With the key ingredients muddled in harmony, it’s time to bring everything to the glass.  First, I pour my kiwi-mint-lime mixture into a serving glass.  I then add 3-4 ice cubes.  You will most definitely smell the minty fruit combination without picking up the hint of smoke.  That flavor will come when the drink passes over the taste buds.

Vodka Makes It Adult

The final steps to our Smoked Kiwifruit Caipiroska – adding a quality vodka.  This will be equal parts vodka and carbonated water, whether you use straight seltzer, tonic, or even coconut water.  You certainly can experiment with the water you like best.  There are no rules when it comes to cocktails.   I like to give my caipiroska a little stir just to combine things a bit more.

Lay Back and Enjoy

Using simple seasonal ingredients of kiwifruit, previously smoked using SmokinLicious® alder wood and a hand held food smoker, fresh mint, and lime, we’ve given a twist to the traditional caipiroska.  Muddled together for incredible flavors and aromatics, premium vodka and your favorite sparkling water are added.  Finish the beautiful glass off with a sliced kiwifruit and you’re ready for fun entertaining or a kick back afternoon or evening.

The Yummy Ingredients to Make a Perfect Smoked Pear Bellini Cocktail

Taking the popular Bellini cocktail featuring Prosecco to a new level, this recipe features smoked pear.  Once you’ve followed our segment on smoking fresh pears, you’ll be ready to try this distinct cocktail.  Be warned, this is not for the light, fruity drinker as this has a strong, smoky undertone giving it more of a savory flavor.

Making Simple Syrup to Sweeten Things Up:

The first step to a balanced Bellini is to make the simple syrup which will provide the sweet flavor to the smoky undertone.  Place a saucepan over medium-high heat and add 1 cup of water and 1 cup of sugar.  I am using organic sugar which will give a yellow-amber hue to the finished syrup.  Be sure to keep stirring the mixture until a low boil occurs.  The sugar will be completely dissolved at that point.  Remove from the heat and pour into a measuring cup for ease in adding to the blender.  The simple syrup must cool completely prior to using in the fruit puree.

Making Smoked Pear Puree

Now it’s time to take the previously smoked pears and begin preparing for the blender.  Although the skin of the pear is high in nutrient value, when smoked with the skin on, the skin can become quite dense.  I will be removing most of the skin for this reason since we want a smooth puree.  Using a paring knife, I remove the skin of each pear half and then cut into small cubes.  I add these cubes to my blender.  Be sure there are no hidden seeds.  You will see the golden hue to the pear meat which resulted from the smoking process. If using a lower power blender, you may need to do this step in two parts to ensure a full puree.

Starting with the blender set to a low setting, begin blending the cut pears, slowing increasing the speed to a medium setting.   Beginning adding the simple syrup in a steady stream until completely combined.  Increase the blender speed to medium-high and blend until the pear puree appears fine and smooth, with no evidence of chunks.

Constructing the Smoked Pear Bellini

I like to pour the pureed pear mixture into a serving pitcher to make it easier to make each drink serving.  Get a bottle of Prosecco that has previously been chilled already.  Add about a 1/3 of a glass of smoke pear puree to each serving

glass and top with chilled Prosecco.  Then skewer a sliced smoke pear and rosemary sprig to each glass.  Serve while still chilled.

Saluté

Using seasonal pears, in this case, Bosc variety, we bring a smoky version to the standard Bellini featuring Prosecco sparkling wine.  With a simple puree of previously smoked pears, the addition of simple syrup, and a blending of the two with Prosecco, the result is a distinct, savory version of the Pear Bellini cocktail.  Enjoy the Smoked Pear Bellini cocktail and don’t be afraid to add your own special additions like pomegranate, cranberry or even a bit of vodka for those who like a strong fruity cocktail.  Cheers!
