We introduced you first to the details on the ever-popular Sugar Maple hardwood but now let’s talk fruit wood, specifically, the forest grown cherry hardwood.
Cherry is one of those hardwoods that people have familiarity with. They know it is a good smoking wood and tend to think it adds a “sweet” component to the smoked meats.
Cherry is part of the Rosaceae family of wood. The scientific names for the varieties we manufacture are Prunus pensylvanica L.f. or Prunus sp. but the common names for the varieties found in the Western New York and Northwestern Pennsylvania forests include Pin Cherry, Fire Cherry, Bird Cherry, Wild Red Cherry, Pigeon Cherry, and Black Cherry.
Cherry Smoking Wood- This Is No Orchard Wood!
Now let’s be clear. I’m not referring to orchard cherry woods that you see in rows grown for their fruit production. Those trees are completely different from forest, wild trees. Orchard trees have human hands manipulating tree growth, fruit production and a whole host of other items. Plus, orchard grown cherry trees have a high prevalence of pesticides applied. That chemical stays with the tree for life! This residue gives a bitter undertone and frankly, can make cherry a less favorite wood to use as a smoking wood.
Forest Grown for Purity
Forest wild cherry trees have a much more mild profile with a slightly sweet/tart hint. They are highly aromatic when first cut but release a nice essence of the wood when burned regardless of the age of the wood.
The best part of cherry is its versatility. You can use it with anything! Poultry, beef, pork, lamb, fruits and vegetables, even desserts on the grill! Plus, it is a great hardwood to mix with your other favorites as it easily balances out stronger (Red or White Oaks or Hickory) hardwoods producing less harsh results.
Cherry Smoking Wood- Tip:
Be sure to use a meat probe when cooking with Cherry wood as this wood provides a reddish-pink hue to the meat that can easily be mistaken for under-cooked. Get in the habit of always using a quality thermometer when grilling and smoking so you never make the mistake of overcooking.
I’ll bet you’ll find yourself reaching for cherry more and more once you experience just what this fruit wood can do for you food’s flavor!
