INFUSING WOOD SMOKE INTO BRUSSELS SPROUTS
A favorite of the cabbage family, Brussels sprouts came to the United States via French immigration in the 18th century. They are dominantly grown in California and available June thru January making them a Fall and holiday menu favorite. SmokinLicious® will take the flavors up a notch and add wood smoke into Brussels sprouts for two upcoming recipes. We’ll do this on the gas grill fit with wild cherry wood chunks to bring subtle smokiness to the finish sprouts. First purchase 3 lbs. of Brussels sprouts and get two cherry single filet chunks, and you’re ready to fire up the grill and get smoking.
The Easy Grill Method for Infusing Wood Smoke into Brussels Sprouts
Bringing the flavor of wood smoke into Brussels sprouts is so easy. To start, gather about 3 lbs. of Brussels sprouts, some cooking oil, butter, and a heavy-duty skillet. I prefer a nut oil like walnut or almond. For a skillet I’ll be using cast iron. I’ve trimmed the ends on about half the sprouts and for the other half, I’ve trimmed the ends and cut them in half. That’s it! Fire up the grill and get ready for a quick method of adding great wood-fired flavor.
It only takes a couple of pieces of wood chunk to bring fabulous flavor to the grill. I set up a cast iron pan on one side and place two cherry wood chunks on the heat shields of the far burner. Let the pan heat up for about 5 minutes then pour in a couple of tablespoons of oil and heat. Right before I add the Brussels sprouts, I add a couple of tablespoons of butter. In go the whole Brussels sprouts and the lid comes down. Leave untouched for about 5 minutes before turning.
Flavor Finish
As I have two recipes in mind I’m cooking two batches of Brussels sprouts: one batch whole and one batch halved. After leaving for 5 minutes, I stir them to ensure that all surfaces are infused with wood flavor. I maintain a temperature of 350-375° F which will make this a quick cooking method. The first 5 minutes, the lid is down but once stirred, you can finish the cooking with lid up. Remember, cast iron will retain heat, so you can turn the heat off and let sit for about 5 minutes.
After stirring a couple of times, both the whole and halved Brussels sprouts are ready in about 20 minutes time. I simply remove them from the heat and bring them in to be added to my favorite recipes.

The question is one of the most common we hear. What is the most popular wood you sell?
Initially, our response was that there wasn’t one hardwood that was dominating the order system. That certainly has changed over the course of the past few years.
Without question, Hickory has become the most requested hardwood.
Hickory for Food Smoking- Why?
I truly believe the catalyst for the popularity of hickory particularly for smoking foods, is television and YouTube. Yes, all those cooking and food shows and YouTube channels have catapulted grilling/smoking with wood and charcoal leaning toward Hickory. As if Hickory for food smoking is the only choice for “real” barbecue.
Some of the roots of the popularity of Hickory is the generational secrets of barbecue. Hickory has been, for many decades, a commonly found hardwood in the traditional barbecue states who are credited with bringing barbecue to the limelight. North Carolina, South Carolina, Georgia, Virginia and then advancing west to such states as Tennessee, Missouri, and Alabama. Gradually, those who wanted to duplicate the smoke flavors of the south continued to request hickory. The result: hickory for food smoking and cooking has become one of the highest demand hardwoods in North America.
Hickory for Food Smoking- Is There a Holy Grail for Smoking Wood?
Without question, those known in the world of barbecue as major players have stimulated the belief that their choice in smoking wood is the key to their success and notoriety. Here’s is the conflict: many fail to admit that there are many other factors that account for their success. Although they may have made their mark by sticking with that one wood for the entire time they cooked and gained popularity, they also committed to specific equipment, fuel product say a specific brand of charcoal, meat supplier, whether they keep the bark on the wood or remove it, and brands or recipes for rubs/sauces/marinades. ALL these items factor into the overall success of a cooking event even in barbecue.
Life of the Tree is Key
I won’t get into the details about one brand of charcoal or briquette over another, or the influence of a wet or dry rub on the meat’s ability to absorb smoke vapor. Those discussions will be for another day. What I will stress is that the climate and soil of tree’s location is by far a key determinate in whether it will make a great smoking or grilling wood. Specifically, the more balanced the pH level of the soil the tree’s roots are bound to and the amount of precipitation the tree is exposed to in a given year, directly affect how favorable the wood will be for smoking, grilling, and cooking in general.
I’m often told by new customers who had previous experience with hickory and found it to be too strong in flavor, producing too dark a coloring to the food’s exterior, and often producing a sooty appearance to both the food and equipment, that once they tried our wood, they had the exact opposite result. Why? The easiest answer is we simply have better-growing conditions in the Northeast than other areas that grow Hickory trees. Plus, we have access to the better species of this hardwood family.
Hickory for Food Smoking- More Choices Don’t Always Mean Better Outcome
With over 20 species of Hickory in North America, they are not all equal when it comes to cooking with them. Many of these 20 species are known to produce bitter undertones when foods are exposed to their smoke vapor. That means poor results for the cook or Pitmaster who believes in hickory for their food production.
I like to compare hardwoods for cooking to extra virgin olive oil. There are hundreds if not thousands of brands of olive oil available. Yet, many producers marketing an extra virgin olive oil (EVOO) are using low-grade oils in the production rather than meet the requirements for EVOO labeling. Wood is similar. There is no obligation to label where the wood comes from, how old it is, how it was processed, what species it is from, and if it is from the raw material of the timbered tree or a by-product or waste product of another use. Just like olive oil producers using pomace or the olive residue left over from the traditional production of olive oil, hardwood can be a leftover as well and re-purposed into something it wasn’t initially intended for.
Blaze Your Own Trail
My hope is that I’ve stimulated some thinking into what makes for a great smoking wood, grilling wood, or cooking wood in general. Instead of duplicating a celebrity figure or following a current fad, blaze your own trail into what pleases you and the people you are serving your amazing grilled and smoked foods from the wood fire to. With so many factors affecting a food’s taste, appearance, and aroma, it’s time to simply experiment, keep a log, and find what pleases you. SMOKY-GRILLED POTATO: OUR #1 CROP GETS A NEW FLAVOR TAKE-As the #1 crop in the world, available all year, potatoes are a favorite for a variety of reasons. Get the nutritional benefit of this abundant vegetable by adding flavor in a different way – cooking it over charcoal and hardwood!
Ingredients for Your Smoky-Grilled Potato Dish:
New red and white potatoes
3 tablespoons of oil (grape-seed, walnut, almond, vegetable, or canola)
I’m using small red and white potatoes. You’ll need a knife and cutting board, as I like to cut these small potatoes in half to allow for maximum wood fire flavoring. I’m going to use a vegetable grill pan but you can use any heat safe pan whether foil, glass, heat-safe ceramic, or cast iron. Cut each potato in half, and place in the grill pan.
Seasoning and Oil Bring Out the Best
Just 3 simple ingredients are needed before the pan is placed on the grill. Drizzle three tablespoons of oil over the halved potatoes, then add coarse salt and fresh pepper. The oil can be grapeseed, walnut, almond, vegetable, or canola, anything you have and prefer. Mix well to ensure each potato is coated, then let rest to allow the seasonings to penetrate before adding to the hot grill.
Charcoal Grill Set Up
Time to get the grill ready. I’ll be using a combination of charcoal and wood – charcoal as the fuel for heat and wood chunks and chips for flavor. Keeping my intake vents open on the kettle grill, I start a chimney full of charcoal. Just one chimney will be needed for the actual cooking. I lay a small line of unlit coals down both the right and left side of the charcoal grate to keep my temperature stable through the cook. I pour the hot coals in the middle then add two Sugar Maple wood chunks and a handful of Wild Cherry Grande Sapore® wood chips on top of the hot coals. On goes the food grate and then my vegetable pan of halved seasoned potatoes.
Once the wood is set up and the food grate is on, the pan of potatoes is added. Put the grill cover on and adjust the lid outtake vent to 1/3 open position. Now, adjust the lower intake vent to the ½ open position. Let the potatoes cook for about 25 minutes prior to stirring. You’ll see the golden hue from the maple and cherry smoke vapor. Be sure to rotate the potatoes on the bottom to the top so that there is even color and flavor to each piece. The total cook time will be close to an hour but each grill and charcoal will perform differently so be sure to watch closely after the first 35 minutes. Remove when the potatoes can be pierced easily with a toothpick or knife tip.
Smoky-Grilled Potato- Full Flavor With All the Nutrition Intact
With all the nutritional value still intake, these golden, smoky potatoes are ready to eat as is or you can include them in your favorite potato recipes. I’ll be giving a smoky edge to my interpretation of a potato curry in our next recipe feature. Take advantage of this popular comfort vegetable and the ease of using a charcoal/wood grill for cooking and give your meals a memorable flavor enhancement.

Go ahead and experiment with a variety of your favorite spices or ingredients when grilling or smoking your spuds. There are many varieties of potatoes and they all do well on a grill or in a smoker but, just remember- the fresher the better!

These two questions have been quite common for the 12+ years we’ve been in business. What does a cubic foot box of wood weigh? How many pieces do you estimate are in a cubic foot box of wood?
Due to the regulations imposed by The National Conference on Weights and Measures -Uniform Regulation for the Method of Sale of Commodities, we cannot specify weight on a wood product, even though we are a cooking wood. Instead, when asked about weight, we only provide an estimate clearly stating that wood is not sold by weight due to the variation in moisture level and density of the wood selected.
I can, however, tell you the details that a recent first-time customer posted to an online forum that had me elated!
The Specifics You’ve Asked About Wood Chunk for Smoking
This customer took a lot of time and effort to get to the details about our wood; the packaging and the weight not just of the carton, but of specific select pieces. This customer purchased the Serious Smoker Double Filet Wood Chunk which is our cubic foot carton product with the smallest chunk sizing. We offer an option to select up to 3 wood choices for this carton size, with this customer selecting our 3 most popular hardwoods: Hickory, Sugar Maple, and Wild Cherry.
First, let’s look at this customer’s overall purchase.
Wood Chunk for Smoking- It’s In The Numbers
The packaged hardwood weighed in a 32.5 lbs. A total of 139 pieces of wood were packaged. Of that total, 48 pieces were Wild Cherry, 44 pieces Sugar Maple, and 47 pieces Hickory.
Individual Weights
This customer owns equipment that references specific weight of wood needed to smoke optimally. In this case, just 2-4 ounces of wood is ideal.
Although weights for each of the 139 pieces of wood were not obtained, sufficient sampling was done. Here is what was reported:
the lowest weight of a Wild Cherry chunk (remember, these are all double filet) was 1.5 ounces and the highest was 4.1 ounces
lowest weight of a Sugar Maple chunk was 2 ounces and the highest at 5.7 ounces
lowest weight of a Hickory chunk was 2.8 ounces and the highest at 6.4 ounces
For this equipment user, there was an estimate that 139 pieces of hardwood would provide for some 100 smoking events!
What I loved the most about this report is that it correlates specifically to the density of these 3 hardwoods. Hickory has the highest density of the 3 kinds of wood selected and this is reflected by the weight of the individual pieces sampled. Sugar Maple would be next in density followed by the Wild Cherry, all proven with the reported weights.
What Did You Learn?
Unquestionably, there is a lot of wood chunk pieces in a cubic foot carton! Which means you want to ensure you can use that much wood in a reasonable amount of time to maximize the freshness factor and peak level for function as a smoking wood. Individual pieces will vary in weight even if the dimensions of the pieces are relatively the same. That is the nature of a water-rich material – the water weight influences the overall piece weight.

ARE FRUITWOOD TREES LIKE THE APPLE “SNOW WHITE” BIT INTO?
There is a fierce debate out there about the use of fruitwood trees, specifically apple and cherry varieties, for cooking purposes. As a Company, we frequently get the same question – “Why don’t I see Applewood as an option to purchase?” Here’s the short answer: We do not, and will not, produce our products from orchard-based woods. Our reason is simple – we do not believe in smoking foods over woods that have been or have the potential to be sprayed or growth enhanced with chemicals.
Trees
Let’s review a fact about trees. All trees produce prussic acid, better known as hydrogen cyanide. We feel that humans can use woods produced in nature when they have been left alone, unburdened by the human hand in trying to manage what sometimes is the normal cyclical pattern of nature. In the areas in which we purchase the heartwood for our cooking wood production facility, the varieties of cherry (Prunus pensylvanica L.f.) we commonly deal with are:
Northern Pin Cherry, Fire Cherry,
Wild Red Cherry, and Pigeon Cherry.
Of course, predominately, we bring in Wild Red Cherry. There are many different cherry tree varieties available throughout North America. The main difference in these woods is that our forest trees, the type we manufacture, tend to be on the sweet-tart side versus the sour-bitter. For the most part, hydrogen cyanide is found mainly in the leaves and seeds of the cherry tree. Black Cherry bark is also commonly used in herbal cough remedies.
Opinion:
The dominant opinion is that when used in small quantities, the hydrogen cyanide is a moot issue. Now let’s talk about the smoking application of wood. Cyanogenic compounds WOULD remain a factor in our production of cooking wood. This is because we do not allow our woods to deplete their moisture content to a level that other wood product manufacturers may (what is commonly referred to as “seasoning of the wood”).
For ideal smoking of foods, wood needs to have a moisture level preferably at ~20%. This results in the wood smoldering rather than burning at a rapid rate. The resulting smoke from the plant material provides for that wonderful flavor. Because smoking is done at low temperatures for longer periods of time, the polycyclic aromatic hydrocarbons (PAH’s) found in wood molecules are not stimulated as they normally would be when cooking, say, a steak over a hot flame. Thus, the health risk associated with PAH’s and smoked foods is not considered an issue. The same can be said for ember cooking – using the heat of the residual coals to cook foods.
OUR CONCERN:
Our main concerns regarding woods used for wood-fired cooking methods is to always ensure a bark-free product. Bark does not hold moisture but rather is designed to rid the tree of wastes by absorbing them and locking them into this area. In fact, this is the reason why bark-on woods burn so much faster than bark-free wood pieces. This portion of the tree is responsible for temperature flare-ups, tainted smells, ‘spotty’ appearance of the food’s skin, creosote, an increase in the production of ash. Additionally, once the temperature is increased during wood-fired cooking, heterocyclic amines, or HCAs, are created due to the reaction of the amino acids and creatine with the higher cooking temperature.
In a nutshell, a person is at greater risk of cyanide exposure in treated wood products for home construction than they are when consuming BBQ or other wood-fired foods. Knowing the source of the wood being used in the cooking application is vital to ensure that the necessary steps have been taken to prevent tree disease and pest infestation spread, as well as to ensure that the wood has not been exposed to any chemical/toxin treatments.
It is our hope, that one day soon, inspection of the wood products used by restaurants, caterers, BBQ competitors, and grocery stores who promote smoked and natural-wood fired foods, will occur as normally as food inspections. After all, I think we all can agree that WHAT you cook the food over is just as important as what food you are cooking!
Dr. Smoke- “Enjoy the fruit of the tree because that is what they’re there for. Just be careful when using fruitwood trees from orchard based woods to cook your food.”
Rhubarb Smoked – I will make a confession: I don’t like rhubarb, a spring to early summer perennial vegetable, on its own, likely due to the very tart flavor. I do, however, enjoy this vegetable smoked and then blended with a sweet fruit.
This is likely why you may not have realized that rhubarb is a perennial vegetable since this is so widely used for dessert items. The rhubarb stalks are suitable to eat but the leaves are poisonous meaning they should never be eaten or added to a smoothie. Since this is a tart vegetable, I am going to first smoke it to change the balance of that tartness. Later, I plan to use these smoked stalks in combination with some smoked strawberry to make a strawberry-rhubarb fool, a delicious treat or dessert.
For now, let’s get about a pound of fresh rhubarb, hopefully from a garden or a fresh market, and meet at the smoker for an easy method of infusing wood flavoring to this tart stalk vegetable.
Smoked Rhubarb- Selecting and Preparing
Rhubarb is a perennial vegetable that prefers cold conditions to thrive. When first planted, you won’t be able to harvest any of the stalks until the second year, similar to growing asparagus. When ready to harvest, you’re looking for stalks 12 to 18-inches in length with good girth to them. If the stalks are too thin, that means the plant does not have enough nutrients.

Once harvested, clean well under water and pat dry. Trim all the leave ends from the stalks as these are poisonous, and discard. Note you can compost the leaves as the poisonous oxalic acid breaks down quickly when decomposition begins.
I prefer to cut my stalks into 3-4-inch lengths. That’s it! Likely one of the easiest vegetables to prepare for the smoker. Speaking of the smoker, time to prepare ours. I’ll be using an electric smoker today since smoking rhubarb takes very little time.
Tasting Notes: Whether to cut the stalks is dependent on what you plan to do with the rhubarb so adjust this step according to your planned recipe.
Smoked Rhubarb- Fire Up the Smoker!
I’ll be using a standard vertical electric smoker that uses lava rocks as the radiator of the heat as well as an electric element as the fuel/heat source. My electric smoker allows me to use wood chunks so I have an assortment of small sizes that total about 6 ounces of hardwood. The double filet wood chunk size is ideal and as a tip, if you note to SmokinLicious® the need for thin chunks, these can be provided.
My set up is simple: I wrap one of my grill grates in aluminum foil, place my element on the lava rocks and insert wood chunks between the element’s spaces. I’m using a combination of maple and cherry hardwood. I add my water pan with about 2-inches of hot water so energy from the unit isn’t wasted heating up the water. On goes my tray of pre-cut rhubarb that are spaced to allow the smoke to penetrate all around. Leave these untouched on the smoker for about 20-25 minutes or until the thickest stalks are fork tender.
The best part about rhubarb on the smoker is it takes very little effort. Trim, clean, and cut to size then place on the grate and smoke. In about 15 minutes time, you’ll see a golden hue come out of the rhubarb pieces. That means the smoke has penetrated its great flavor. Using a fork or the tip of a paring knife, I check the thickest stalk to be sure I can easily pass the metal tip thru. If so, then the rhubarb is tender and ready to come off the smoker.
If your plans are to prepare this for rhubarb pie, then just continue with your favorite recipe. This step is simply to provide another flavor level and begin the cooking process. WOOD FIRED GRILLED WATERMELON BECOMES A STAR
You may have seen segments on grilling watermelon before which show slices of watermelon on a standard gas grill. Although I agree that the heat generated from the grill will produce a sweet outcome, there is no comparison to doing a grilling technique that incorporates wood for added flavor.
In this segment, I’ll show you how to grill watermelon on a grill of your choice with wood chunks for the unique combination of sweet and char flavors that only comes from grilling with wood.
Grilled Watermelon- Easy Prep
I think this is by far, the easiest preparation for the grill. All you need is a watermelon of your choosing and a grill; gas, electric or charcoal. Just 2-3 wood chunks from SmokinLicious® and about 20 minutes once you have a lit grill, and this method of bringing flavor to the standard watermelon will be complete.
As watermelon contains a lot of water, it is essential that you work with a medium heat setting on your gas grill and hot coals with a moderate flame for the charcoal grill. If using a gas grill, be sure to set up the wood chunks on just one side of the grill and allow the chunks to smolder first so there is plenty of smoke vapor. Since watermelon grills in no time at all, you want to have enough smoke vapor produced to give a great tasty outcome for both a gas grill or charcoal grill method. Electric smokers are self-contained allowing for simple dialing in about 15 minutes worth of smoking time.
For the watermelon, cut lengthwise in half and cut each half into individual slices about 1-1/2 to 2” thick. Or, you can remove all the rind and grill just the watermelon meat. Keep fire safe tongs at the ready so you can turn the watermelon slices just once as they evaporate some water and sweeten up. DO NOT leave the grill! This fruit requires a careful watch so stay put and you’ll have every piece cooked to perfection.
So Many Uses for Grilled Watermelon
You’ll see how the watermelon darkens in color, get bits of char coloring to the skin, and is less water soluble. That’s the perfect outcome. Now it’s time to think about how to use your wood flavored melon.
First, you can enjoy it as is. When I serve this naked, I just give one additional flavor such as fresh, chopped mint. But if you’re looking for a lunch or lite dinner entrée, think salad by including some baby arugula, goat cheese and a splash of balsamic vinegar. For a spicy version, sprinkle the wedges with red pepper flakes, a bit of granulated sugar, and lime zest. Wood fired watermelon also works great with other summer favorites like grape and cherry tomato, pepper slices, sugar snow peas, and cucumber. No matter how you choose to serve it, grilled watermelon with wood flavoring is going to top your list of grilled favorites.

There are over 550 annual barbeque competition events in the United States. Originally constrained to the Southern states, barbeque is now ubiquitous in most parts of the country. Thanks to the popularity of all things vintage, craft cocktails have made a huge comeback, and although it may not seem so at first glance, these two are a match made in heaven. As creative as barbeque pitmasters can get with their rubs and sauces, so, too, can you with specialty cocktails featuring smoked whiskey to pair with smoked meats.
Smoked Whiskey Manhattan- A Classic Match
You don’t need a pull-behind trailer rigged with the latest smoking equipment to make your own delicious smoked meats. As long as your kitchen is equipped with a stove, you can get in on this delicious food preparation. While you can purchase stovetop smokers, it’s fairly easy to DIY a smoker yourself with household products you probably already own. No matter what you’re serving, a Manhattan will pair beautifully with your meat.
Classic Manhattan
Ingredients:
Ice
2 oz. whiskey
½ oz. sweet vermouth
dash of Angostura bitters
orange peel
Maraschino cherry
Shake whiskey, vermouth, and bitters with ice; strain into lowball glass. Rub the rim of your glass with the orange peel and garnish with cherry. Substitute vermouth with 1 oz. of agave nectar and use chocolate bitters and Jim Beam Devil’s Cut (barrel aged whiskey) for an alternate take on this classic.
A Smoked Whiskey Summer Treat
Take this simple, two-ingredient cocktail and kick it up a notch by infusing it with a smokey flavor that matches your menu. With a smoking gun (available for around $100, or you can make your own with some inexpensive tubing and a small-mouthed container), you can “rinse” your chilled glasses with smoke, or even smoke your entire concoction, using the same wood you use for your meat. The tartness of the grapefruit juice will cut the richness of the meat and is perfect for a backyard, al fresco dinner.
Jack Honey
Ingredients:
2 oz. Jack Daniels Tennessee Honey
3 oz. fresh-squeezed grapefruit juice
Pour over ice into collins glass.
Something Truly Special
If your skills as a pitmaster aren’t the only thing you want to show off, here is a very special cocktail that will wow your guests. The smokey flavor and touch of cinnamon gives the classic whiskey sour a brand new twist that will leave your guests in awe. You’ll need to plan ahead for this one, as it requires two different, homemade syrups, but if you’re looking to win for best bartender, this one can’t lose.
Smokey Sour
Ingredients:
Ice
2 oz. whiskey
¾ oz. fresh lemon juice
½ oz. cinnamon bark syrup (.3 oz cinnamon bark, 1 cup Turbinado sugar, 1 cup water; bring ingredients to a boil and simmer over low heat for 2 minutes, let sit for 2 hours, strain and keep refrigerated)
¼ oz. Lapsang souchong tea syrup (3-4 tea bags, 1 cup Turbinado sugar, 1 cup water; bring ingredients to a boil and simmer over low heat for 2 minutes, let sit for 2 hours, strain and keep refrigerated)
1 egg white
Add all ingredients to a shaker and shake until frothy. Strain into a coupe glass.
The bold, rich flavor of whiskey is the perfect complement to a rich, smoked meat dish; both American traditions trace their roots back to the South. Ash will tantalize your smoke with a Mediterranean flare
I’LL TAKE MINE WITH AN OLIVE!
We’re off to introduce you to Ash- another hardwood that may not be as well known for cooking as some of its siblings in the hardwood family. But this particular wood, in my opinion, is one of the hidden gems of the hardwood forest.
Ash hardwood is part of the Oleaceae family of wood which is the family of olive trees. The scientific name for the variety we manufacture is Fraxinus Americana L. but the common names for the varieties found in the Western New York and Northwestern Pennsylvania regions include American Ash, Ash, Biltmore Ash.
This hardwood is so versatile in the kitchen whether indoors using wood chips for stovetop smoking, cold smoking, or handheld food smoking or outside in the traditional smoker, LP grill or pizza oven. It can be used with any food for natural wood flavoring/smoking; essentially, any wood-fired cooking technique. The flavor profile is on the light side making it ideal for most any food but in particular, it works great with wood-fired pizza and fish due to its lower moisture level and ability to form the most even bed of coals. I really like using Ash wood chunks for ember or coal cooking as nothing beats how this wood lays the perfect small dimension bed of embers.
Ash provides a neutral coloring to the outer skin of foods. This wood mixes easily with other hardwoods and fruit woods, particularly Hickory, Maple, Cherry, and Alder. It can even tone down the harshness of pungent woods like oak and mesquite.
Why not consider leaving the traditional hardwoods for your wood-fired cooking and flavoring and enjoy the awesome benefits of the lesser known Ash hardwood tree!

I’m going to first relate the information on why the risks in North America are not the same as developing countries and then I will highlight the top six (6) potential reactions we face when using specific woods for cooking. This will be generalized reactions to wood compounds and not the direct result of a specific cooking technique.
Developing countries generally use very primitive equipment for cooking the daily meals needed to sustain families. The simplest method is with three large stones to contain the fire with a pot or other metal container placed on top for the cooking. The fires are fueled by solid materials like coal, wood, dung, and crop waste. All these materials release harmful particles into the air as they burn. Here’s the issue: they employ this cooking set up INDOORS, where they live which generally is in homes constructed from thatch, mud, and/or animal skins. Chimneys may not be present or if present, have no flue to draw the contaminated air out.
Let me start this article by first reminding you that wood contains hundreds of compounds that honestly, we don’t know everything about. For this reason, I am only speaking today regarding those known compounds and what they contribute to foods cooked by wood fire. Specifically, I’ll be looking at lignin which is the only large-scale biomass source that has aromatic functionality. In English, this is what gives wood-fired foods the distinct flavor and aroma.
Often, you read about specific flavors and aromas as they apply to meats but today, I want to delve into the compounds that are most prevalent by wood species and what they offer to food.
Lignin- A Refresher
Lignin is one of the primary compounds responsible for cell construction in a tree and makes up 15-30% of wood cells. It has a primary role in conducting water to feed the tree’s cells and when burned, yields a tremendous amount of energy. Plus, lignin produces rigidity in cell walls which prevents rot.
As a polymer or large molecule composed of many repeated subunits that bond together, it is the only one that is not composed of carbohydrate (sugar) monomers. Because lignin is a polymer, there are many possible bonding patterns between the individual units, thus, we don’t have full knowledge of all the possibilities.
What we do know is lignin contains phenols or hydroxyl groups which are alcohols. As these compounds work together, they produce a preservative action on the food which is antibacterial in nature. The surface of the smoked food is modified with resulting flavors and aromas which are associated with barbecued foods. Let’s take a closer look at these smoke vapor flavors.
If you recall our publication on wood-tar creosote we tapped into the science of wood-tar creosote and its purpose as a preservative as well as producer of flavor, color, and aroma to barbecued foods. In that article, we just barely mentioned the compounds responsible for the flavors. Let’s provide you with the main compound list and what the odor and flavor descriptors are.
Phenol: this compound provides the sharp, robust aromas and the astringent, sharp aftertaste to wood fired foods.
Dimethylphenol: another compound that has a sharp, robust odor that also has a sweet aromatic undertone. Flavors are sweet, charred, and astringent.
Isoeugenol: this is the compound associated with vanilla aromatics in addition to sweet and fruity. Flavor descriptors include sweet, smoked-ham notes, hydrolyzed vegetable protein-like, with clove-like undertones.
4-Methylguaiacol: another compound that includes vanilla-like, fruity, cinnamon-ish, and smoky odors, with flavors of caramel, vanilla, sweet, and pleasant notes.
o-Cresol: odors are smoked sausage like with robust, sharp undertones. This one on its own can produce more unpleasant smoky flavors.
Guaiacol: Smoky, sharp, aromatic aromas with flavors that are spicy, sharp, sweet and dry. This is the yellowish aromatic oil that forms from creosote.
Syringol: Sausage-like aromatic that is sharp and sweet, with a spicy note. These flavors include whiskey notes with smoky-char taste.
Lignin Levels in North American Hardwoods
I’m going to report the lignin levels of common North American hardwoods derived from the Klason lignin method, which values the residue remaining after solubilizing the carbohydrate with strong mineral acid. What follows are percentages of oven-dried woods with temperatures ranging from 68°F/20°C to 248°F/120°C.

Alnus rubra Bong./Red Alder = 24%
Betula alleghanienstis Britton/Yellow Birch = 21%
Carya glaubra (Mill.)/Sweet Pignut Hickory = 24%

Fagus grandifolia Ehrh./American Beech = 22%
Fraxinus Americana L./White Ash = 26%
Populus tremoides Michx./ Quaking Aspen = 19%
Prunus serotine Ehrh./Black Cherry = 21%
Quercus alba L./White Oak = 27%
Quercus prinus L./Chestnut Oak = 24%
Quercus rubra L./Northern Red Oak = 24%
Quercus stellate Wangenh./ Post Oak = 24%
What do all these percentages mean when it comes to your barbecue? You can assume that the higher numbers mean there are larger numbers of compounds at work to flavor your foods. It’s obvious that woods like hickory and oak have great percentages of phenol, guaiacol, and dimethylphenol, since these woods tend to produce the boldest flavors. Those hardwoods like cherry, alder, and maple have the compounds of methylguaiacol and isoeugenol coming forward in the flavors which results in sweeter and more toned coloring to meats. Another factor that must be kept in mind when examining lignin is the heat level the wood is exposed to. Cook at a higher temperature and these compounds can become muddier as combustion occurs more rapidly producing ash accumulation that can change flavors and aromas quickly. All factor in to the resulting flavor, color and aroma of barbecued foods, whether animal protein, vegetable, fruit, or other. This just further supports that wood-fired cooking is an art that requires a balanced hand that understands the importance of controlling as many factors as possible, primary of which is cooking temperature and airflow to bring out the highest percentage of beneficial compounds the wood can offer.

Well, before you ask that question, you should want to know “What woods are safe to use for smoking?”
Hardwood vs. Softwood for Cooking- Softwoods:
Softwoods or coniferous woods should never be used for cooking because they have elevated sap levels and more air in their cell structure. This causes the wood to burn fast, hot, produce lots of sparks, and produce unpleasant flavors not ideal for flavoring foods. Let’s be clear on what a softwood is: pine, redwood, cedar, fir, spruce, hemlock, larch, cypress. These are all no-no’s!
Hardwood vs. Softwood for Cooking- Hardwoods:
Known as deciduous trees that produce broad leaves, produce a fruit or a nut, and generally go dormant in the winter, hardwoods are the woods to use for cooking and makeup roughly 40 percent of all trees in the United States.
Hardwoods are made up of mostly three materials: cellulose, hemicellulose, and lignin. Cellulose and hemicellulose are the basic material of the wood cells; lignin acts as a kind of cell-bonding glue but it is the primary material need for flavoring in barbecue. Lignin contains phenols or hydroxyl groups which are alcohols. As these compounds work together, they produce a preservative action on the food which is antibacterial in nature. Lignin modifies the surface of the smoked food as the wood burns making the food scrumptious!
Hardwood vs. Softwood for Cooking- The Lignin Compound
Although all woods contain compounds which act as a preservative providing both antioxidants and reduction in bacterial growth, there are compounds that are more toxic to people, including compounds like formaldehyde and acetic acid which provide for an overall pH level in wood. Hotter wood fires produce a higher pH level. A good example is mesquite, which produces twice the level of polycyclic aromatic hydrocarbons, or PAHs, meaning it has a pH level almost threetimes the level of cooler burning hardwoods like Sugar Maple and Oak. Remember, it’s PAHs that are of concern when you grill or smoke and why foods cooked by these methods can get a bad rap.
Hardwood vs. Softwood for Cooking- Orchard Woods
Don’t forget a point about orchard woods which are a hardwood.
Woods like apple, peach, and pecan are traditionally raised for their fruit and nut production meaning they are commonly sprayed with pesticides in order to ensure a productive tree. Unfortunately, these pesticides are absorbed by the tree and released when burned. That means, you release them into the cooking equipment every time you use them for grilling and smoking.
Ask questions about the wood you want to purchase, read wood packaging and look for hardwoods that are known to be ideal for wood-fired cooking like cherry, alder, ash, hickory, maple, oak, and beech. Great food memories at the grill or smoker are made when you start with the perfect smoking wood! Don’t settle for anything less.
The Smokinlicious® Test Kitchen had an opportunity to use the Technique® Cast Iron Pan and Smoker which many of you purchased via QVC. Here are some preliminary findings by our Culinary Team:
➝Use caution when selecting cuts of meat with this cast iron pan! We had purchased a 10 lb. pork shoulder and struggled to get the cover tightly on the pan. Right now, it appears that cuts less than 8 lbs. would be ideal for cooking/smoking/roasting/grilling.
➝I’m sure we were not the only purchasers to be disappointed to read in the Technique® brochure that you should “not try to smoke in the oven” with this unit. Rest assured, Dr. Smoke will see if there is a means of actually smoking in a conventional oven by using low temperature and LiquidInfusedWoodChips /Smokin’ Dust®.

➝ We cooked both a bone-in pork shoulder and bone-in chicken breast. Both cooks revealed great moisture to the meat. We used the recommended medium heat setting on our gas range but found that the cast iron pan radiates a significant amount of heat. Thus, we recommend reducing the heat setting to a low-medium (“3″ if you have a digital setting) on gas units. We also turned the heat off our cast iron pan approximately 20 minutes prior to completing the cooking time in order to benefit from the pan’s ability to generate further heat on its own. Remember, all meat should rest prior to cutting.
➝ There was considerable “rendering” out of the fat drippings into the drip pan. There is significant staining on the stainless steel drip pan so you may want to consider lining the pan with foil or even parchment paper to reduce metal staining.
➝ Smokin’ Dust® Usage: although the dust will render black in this pan, it did give off a tremendous amount of aroma. We used the Smokin’ Dust® dry, about 2 Tablespoons worth, in the center of the smoking pan. This appears to be the correct amount although we did not feel it produced as much flavor to the meat as a conventional smoker.
➝ WoodChips: we used Wild Cherry WoodChips (standard grind) in the smoker pan while cooking a bone-in chicken breast on the gas stovetop. The chips also produced significant aroma in the air but we found that they produce much more flavor to the meat. Keep in mind, our chicken breast was just over 2lbs so it fit easily in the grill pan with the cover tightly on. The fact that more flavor was infused in the chicken could be the result of less air leakage than the pork shoulder and the fact the chicken is much more porous allowing for ease in accepting smoke. We used the WoodChips pre-soaked for 15 minutes in water, then allowed to drip dry before placing in the smoker pan. We used approximately 1 handful and spread them in the smoking pan to allow the drip pan to fit easily in place. Once our chicken was finished, we noted that the wood chips also blackened during the cooking process, much like the Smokin’ Dust®.
At this stage in our testing of the Technique® Cast Iron Pan and Smoker, we feel it is comparable to other stovetop units that we’ve tested. One important difference is the fact that there is no built in thermometer, so you must check the meat with a handheld or wireless thermometer to ensure you remove the food at the proper cooking temperature. Here are some other points worthy of mention:
➝ this is a heavy cast iron pan and all parts of it become very hot
➝ the pan can use some additional seasoning as there is some food sticking occurring with the grill pan
➝ it does take some effort to clean but if you re-season and continue to use the cast iron pan, I would anticipate this to become less of an issue
➝ there is a significant convection occurrence when cooking which produces a very moist product but as mentioned above, you must time the cooking process to ensure no over-cooking
