With origins in the Native American tribes of the Pacific Northwest, plank-cooking has developed into a gourmet cooking technique that is exceptionally easy to master. Plank-cooking works by charring the pre-soaked plank during cooking which then imparts the unique smokey flavor of the wood choice. The planks charcoalize and cook from the bottom up and work in the conventional oven as well as on gas/propane grills, direct-heat charcoal grills, smokers, and open pits.
